I am a 50-something grandmother raising our 16-yr-old granddaughter, married 39+ years to my husband/best friend. I am a Christian, Home Ec. teacher, artist, potter, writer, homeschooling parent, a former restaurant owner/chef. We share our home with 2 Shih-Tzus and a Siamese cat. We love to travel and enjoy movies and books, as well as remodeling our 1887 home. My precious only child went to be with Jesus in 2002, and we know we will see her again one day. My favorite Bible verse is Jeremiah 29:11---"For I know the plans I have for you" declares the Lord, " plans for welfare and not for calamity to give you a future and a hope."
My favorite things to cook
Savory dishes, Mexican, Italian, Mediterranean, often quick and easy but from scratch. Southern classics and comfort foods are high on our list of favorites, too.
My favorite family cooking traditions
My heritage on my mother's side is Czech and so every Thanksgiving we have dumplings and sauerkraut along with the traditional turkey, dressing, and sweet potatoes, etc. It would not be Thanksgiving without it! We have a family gathering of approx. 17-20 and have at least 40 different dishes every year--it's a big deal!
My cooking triumphs
For several years in a row, I entered a Pilgrim's Pride Chicken contest and won the grand prize twice and placed 1st or 2nd every other time, along with the recipes my daughter and husband also entered (who also won or placed.) We also had a successful restaurant for 3 1/2 years and 13 years later still have requests for many of the dishes/recipes.
My cooking tragedies
When I was first married, I found a recipe in a magazine for some sort of chicken dish which included both peanut butter AND tomatoes--it was inedible and the SMELL alone made us SICK! I can't imagine what I was thinking to even consider it! 36 years later, my husband and I both remember the dish and the SMELL!!

Awesome Slow Cooker Pot Roast
I have made a variation of this recipe for over 40 years and it is easy, makes great gravy and we love it. However, to add more flavor and create a more tender roast, first I dust the meat with flour and season well with salt and pepper, then SEAR the meat in a bit of oil on all sides till well-browned. I then combine in a bowl 1 cup of red wine, 2 cans of GOLDEN mushrom soup, 1 pkg. dry onion-mushroom soup mix and pour over the roast I have placed in the crockpot. If I have time, I also add about 1# of saute'ed mushrooms and about 4-6 cloves of roasted garlic. Served over rice, potatoes or noodles, it is a wonderful, comforting, hearty meal.

Basic Spicy Tomato Sauce
I make a very similar sauce that I keep on hand in the freezer all the time. The only difference is, I use fresh basil in place of the Italian seasoning, add a tablespoon of tomato paste, and always San Marzano tomatoes. I also sauté the red pepper flakes along with the onion and garlic. I have a freezer full of fresh basil chopped and mixed with EVOO and that is what I add at the end. I always only cook it till everything is combined and piping hot, but I never let it get so hot it comes to a boil---we love the fresher taste. I will try some in a crockpot one day, though. I'm sure it will give a completely different, long-cooked flavor! We LOVE this sauce on any kind of pasta dish, with cheese sticks, on sandwiches, eggplant or chicken Parmigiana, etc. Can't go wrong with this one---thanks for posting!

Beautiful Salad
I am the original poster of this recipe, and I wanted to add that I often add a crunchy green such as romaine along with the spinach, and I sometimes add thinly sliced fresh mushrooms. We tried the blush wine vinaigrette as one reviewer suggested, and it was very good, but we still prefer the depth of flavor and punch the balsamic vinaigrette provides. Thanks for all the positive comments!
