Tantalizingly Tangy Meatloaf

This review is really for the sauce. If you like a sweet sauce this one is excellent! I make a pretty good meat loaf with red/ green pepper, onion and garlic and other things so I did that and used this sauce. In fact I doubled it for dipping and was glad I did. A nice change to the routine fare and OMG, delicious! I'm going use this again and again. I can see it on ham loaf, pork, chicken... well you get the idea. Our Wal Mart carries pineapple preserves.

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

After reading reviews I felt the original recipe sounded a bit bland and utilized many of the suggestions and created a dish that my girlfriend proclaimed the best pasta dish she's ever eaten and I thought to be very, very good. I doubled the cream cheese, shrimp and garlic, used sliced baby portabella mushrooms, added 5 finely sliced green onions and diced sweet red and yellow peppers. I had only dried spices which worked ok and added a healthy dose of fresh ground black pepper. To thin I used 1/3 cup white wine and 1/3 cup half and half. Finally I grated about 1/2 cup fresh Parmesan into the sauce and a little more on top of each serving. Delicious! This recipe lends itself to experimenting and I'll try it not only this way again but with Marsala. Spicing it up a bit sounds interesting to.

Grilled Marinated Shrimp

This is now my go to shrimp grilling marinade. I thought it might be too simple and bland but nope! Turns out it produces absolutely delicious grilled shrimp. Other than reducing the olive oil to 1/2 cup which was plenty I followed the recipe exactly, marinating for 2 hrs which it seems is just right. I used the easier method of grilling in grill baskets. Wouldn't change a thing. You can't improve on perfection! DELICIOUS!

Applesauce Pork Loin

4.5 stars. Very easy and quite tasty. Made 1 1/2 amount of glaze which covered the roast well. Stays moist but remember to brown well before covering. Will make again.
