Soft Christmas Cookies

I am always asked to bring these cookies to Christmas dinner. They hold their shape really well if the dough is chilled and not over-worked. The only flavour in the dough is the vanilla, so use quality ingredients. I use a madagascar bourbon vanilla extract. I always frost them, but they're delicious even plain.

Whipped Shortbread Cookies

These are super easy for my three year old to help make. She measures the ingredients (with the addition of vanilla extract) and tops them with a whole red marachino cherry and sliced almonds. Yum! They are flaky but not dry. Not too sweet, but I like small cookies with a whole cherry.

Aunt Teen's Creamy Chocolate Fudge

I wasn't sure if I was doing this recipe right. I started the five minute timer when I first saw medium size bubbles break, and mixed like crazy while scraping the sides of the pot with a spatula. I pulled it off the heat and threw in the vanilla and it splashed in the heat like crazy, then had only a minute to add the chocolate and have it melt before it became nearly solid. I dumped it in the pan and spread it to the best of my ability, and popped it in the fridge. It turned out really creamy and tasty. I think I will invest in expensive chocolate next time instead of chipits.

Red Velvet Cupcakes

Great recipe. The batter seemed thick, but in the end I loved the density of these cakes. I didn't use the entire bottle of colour. It does not change the taste, so I didn't bother. They are so good served chilled. I served them at Christmas and many of my guests liked them better than any other red velvet they had tried.

Yummy Sweet Potato Casserole

I don't even like sweet potatoes, but I wanted to make them last thanksgiving for my guests. I tried this recipe, and loved it! I am now asked to bring these every year. The candied pecans are an awesome topping. I didn't modify anything, however I also didn't measure. I just threw in the ingredients in amounts that seemed appropriate. Thanks!

Beth's Spicy Oatmeal Raisin Cookies

I adore these cookies. Chewy and tasty. I use the best spices I can buy, and just shy of the 1c of raisins. I cant help but eat more than my share of these with every batch. They freeze good and still come out chewy when thawed. I use all butter, no shortening as I don't keep it in the house, and amazing!

Banana Cake VI

I use this recipe and call them muffins, and people love them. Banana muffins are usually dry and not too flavourful. This "muffin" recipe really impresses. I even do the icing, and call them cream cheese banana muffins. Ha!

Best Big, Fat, Chewy Chocolate Chip Cookie

This is definitely my go-to cookie recipe. I have made it with milk chocolate chips, mini baking m&m's, etc. It is always good. They stay so chewy if you slightly under bake, just how I like them! They never last a day in our house. My hubby's friends laughed when he brought a plate of cookies to poker night, but they were gone in five minutes.

Too Much Chocolate Cake

I made this with a plain chocolate cake mix and a bag of mini semi sweet chocolate chips. It was good. served it with whipped cream instead of any icing. Not too sweet.
