Roast Pumpkin and Feta Risotto

I really don't know how they made the nutritional calculations for this recipe. Does feta cheese have that many calories?

Perfect Turkey

I would really love to try brining my turkey this Christmas but am also planning on stuffing the bird. Can anyone tell me whether or not this would be a good combination. I know some frown on cooking the stuffing in the bird but I promised my husband I would make my stuffing from scratch this year instead enhancing the boxed stuff. Will the brine ruin my stuffing and since this Canadian already purchased her Christmas turkey during the U.S. Thanksgiving turkey sales, can someone tell me if brining a pre-basted Butterball will work. Thanks and all suggestions will be greatly appreciated. cookingfool@live.ca

Mom's Best Peanut Brittle

I guess I just might not be a peanut brittle type person, made it for my husband and both him and one our neighbours couldn't keep their mitts out of if so it must have been pretty good

German Potato Pancakes

These are awesome. I also soak the grated raw pototoes in cold water till I'm ready for them and then dry them in clean tea towel. This is great to do if you are making them on a day where you can get the "messy" part done earlier in the afternoon. Also, I know it's not called for but as a garlic lover, I also add some garlic salt to the mixture and fry them in kosher peanut oil.

Scalloped Potatoes and Onions

These were delicious but I did add garlic salt, a few thinly sliced green onions and a tablespoon of dijon mustard to the sauce before I poured it over the potatoes. The sauce did taste very garlicy before I put it on the potatoes but the strong flavour did mellow by about 50% once it was baked.

Greek Lemon Chicken Soup

Another winner. I do use potato starch instead of cornstarch to thicken but it is great! I've made it a half dozen times since Spring and eveyone who has had it, loves it too

Poke Cake I

I'm glad I came across this recipe. Had it years ago but it was a lemon cake with lime jello and lemon icing and I absolutely loved it!!!! Will defnitely try this with those flavours.

Amazing Lemon Scones

dumb, dumb, dumb, I had measured all the ingredients out except for the milk, frozen butter and icing sugar so that when I got home almost everything would be ready to go. Well I forgot to add the sugar and the lemon zest to the batter -DUMB-. I tasted a crumb when I took them out of the oven and I knew right away the sugar wasn't in there. yi, yi,yi,.... so i heaped on the icing glaze with lots of lemon juice and no water and both my husband and I thought they were still pretty good. I did add dried cranberries and used butter milk and make in the pie shape and cut the triangles that way. I can't wait to make them again with the sugar and lemon zest!!!!!!
