Easy Meatloaf

I make this recipe or some variation of it everytime I make a meatloaf. I must say that this TYPICALLY turns out excellent. The only time it doesn't is when it is my fault and I mix the ingredients too much and the meatloaf comes out lacking in texture. Some of the variations that I have done in the past... grate the onion instead of chop it gives the onion flavor without the crunch, use 1/2 lb sausage one lb beef instead of 1 1/2 lb beef (changes up the spices a little). In the summer I add fresh basil and thyme. I do vary the sauce a little when I make this.. I cut the brown sugar down to 1 T and I add 1 T of A1 in place of one of the T's of Mustard (just personal preference). All in all- excellent recipe.

Slow Cooker Pulled Pork

Delicious. The pork stays tender and juicy. I made this with Dr Pepper on my second run and like it a little better but ONLY becuase you can still taste the undertones of the rootbeer and I don't particularly care for the flavor of rootbeer.

Zucchini Pasta Bake

I messed up and forgot to add the pepper (both black and red). I'm guessing this is NECESSARY. Otherwise, there is no flavor.

Zucchini Brownies

I liked these but was the only one in the house. The texure was not quite brownie like which is my favorite part of the brownie. I shredded the zucchini with a cheese grater but it REALLY should have been put into the food processor until finely chopped or maybe even liquified. I plan to try them again and see if I didn't mess up the texture somehow.

Corn Dog Muffins

We all liked these. I baked them and put them in the freezer for easy school lunches. I agree the sugar is a bit over the top, but I think cutting it out all together would keep the muffins from having a crisp-ish chewy outer shell. A note: it's really hard (at least it was for me) to get a half a hot dog in each muffin when chopping them up, but this is a MUST. Otherwise there is not enough hot dog in the muffin.

Turkey Veggie Meatloaf Cups

These smelled wonderful. I made them exactly as described in the recipe. They were good, but I agree with others that they need a bit more seasoning. Next time instead of using regular bbq, I will use honey chipotle and maybe a dash of mustard in the meat itself for some zing. Otherwise, good alternative (upon occasion) to regular meatloaf. Thanks!

Strawberry Angel Food Dessert

Because this receipe is so quick and easy I have made it for every potluck I've gone to this year. I completely omitted the glaze, used a combination of strawberries, blueberries, raspberries, and blackberries, and cut the sugar in half. I also toggle back and forth on using 1 stick of cream cheese or 2. It really is a crowd pleaser for those who don't like super sweet desserts.

Garden Penne

I actually made penne with meat sauce earlier in the week. Then applied this recipe with the leftovers. It was a fantastic way to use up some of our garden veggies and eat leftovers without feeling like we HAD to. I even have enough left over to freeze for a few lunches in the future. I will definitly make this again.
