Mozzarella-Stuffed Meatballs
I used this as a base recipe. They turned out stupendous! Made them three days in a row. Changes I made: used ground beef, add salt and pepper to taste, cubed mozarella instead of using cheese string and I breaded the meatballs. whisk egg in bowl, salt and pepper to taste. Have one bowl with 1/4 cup flour and another bowl 1 cup seasoned italian breadcrumbs. Then dip meatballs in flour, coat in egg mixture and coat in breadcrumbs. Super delicious with a crispy coating!

Asian Lettuce Wraps
This was soooo delicious! I did not have ginger or chili pepper sauce, did not have in the grocery store that day. Will definitely make again with missing ingredients and add some peanuts for extra crunch. Hubby and my two toddlers loved it! Hubby was very impressed! Good thing I doubled recipe, we were able to eat two nights in a row. We placed on top of jasmine rice instead of lettuce! Update: I have made these at least 5 more times since the first time. Romaine lettuce works perfect! You fill it and roll it like a taco! Super delicious!

Clark's Quiche
SPECTACULAR! My neighbor made one similar and I was looking for the recipe on here. This was a 100 times better! Delicious and very easy to make! I did make a few preference changes. I did not add mushrooms. I used polish turkey kielbasa instead of ham and diced it pretty small. I used green/spring onions instead of parsley because that was all I had on hand. Also used a non-sweet heavy whipping cream instead of half and half because that was what hubby bought. Again this was extremely delicious, pretty sure I wouldn't have made so many changes if I would have gone grocery shopping! Haha But none the less everything worked! Sidenote: My two toddlers absolutely ate it up. Great way to get them to eat veggies!
