Hawaiian Coleslaw

I made it for a dinner party. The guests all liked it, but I thought it was a little bland. I did sprinkle on a few sunflower seeds and some dried berries which helped a little, but I probably won't make it again.

Beef and Guinness® Stew

This was some of the best beef stew I have had in years. I used everything just the way it said. Another time, I might try putting it the crockpot as I think it should work there too. It thickened up very nicely without the addition of flour or anything. And usually I have to be very careful of tomato paste and tomato sauce as it gives my husband heartburn, but it didn't bother him in this.

Creamy White Chili

This was really good. I made the full recipe for just my husband and myself and we only had enough left over for about one more meal. The only change I made was that I added two cups of diced turnips since I have an abundance of them in my garden.

Honey Baked Chicken II

I made this just the way the recipe said. I didn't change anything. In fact, I used it because I needed something simple and easy, and it fit the bill that way. But I really thought it lacked something for flavor. It seemed very bland to me. Probably some pepper or maybe some garlic. I don't know. I probably will look for a different one next time.

Maple Fudge

I had a recipe for maple syrup fudge years ago and couldn't find it. I remembered that it only took about four ingredients, so I thought maybe this was it. I tried it twice. The first time it was impossibly burned before it ever got to softball stage. I thought maybe I just tried to cook it too fast since you aren't supposed to stir it after it boils. So I cooked it on a lower temperature and watched it very closely, taking it off the heat as soon as my thermometer read softball. It was still slightly scorched in the middle of the pan. But mainly it isn't fudge at all. It is more like taffy or maple flavored caramels. It isn't bad tasting, but I wanted fudge.

Baked Macaroni and Cheese I

It was too thick and pasty. I liked the bacon in it, but if I did it again, I would simply melt the cheese in hot milk and mix it in. I don't think the flour is necessary at all.

Chicken and Mushroom Chimichangas

These were awesome. I might have had a little more chicken than it called for because I got five out of it. To heat up the leftovers, I just popped them in my NuWave convection oven for about 10 minutes. It reheats them and crisps them back up without burning them. They lose the crispiness when kept as leftovers, so it's nice to have a way to get it back. I bought extra tortillas because I plan to try the same thing with smoked, pulled pork that I have in the freezer from an earlier smoking.

Eggplant with Almonds

By the time I finished the cooking after adding the tomatoes, etc., the egg plant went mushy. We probably just don't like egg plant well enough to make it work for us.

Caramel Popcorn Balls

It is very tasty but WAY too much popcorn. I cooked all the popcorn it said, and then had to triple the syrup to get enough to hold it all together. Either cut the popcorn in half or triple the syrup. Maybe double would work, but triple is better.
