Hearty Split Pea Soup

Reviewed: Jan. 26, 2011
this soup could not be easier! tasted great. followed directions exactly, except used chicken stock instead of water. I checked it after about 3 hours on high and it was done. It's definitely going into our rotation - thanks for the recipe!

really quick easy and good. I've had this with just brown sugar before, the oat addition is great. As with any food under the broiler, just keep your eye on it.

Cabbage Rolls II

Reviewed: Jan. 7, 2011
This was great. Only giving 4 stars b/c it needs tweaked a bit. The sauce is easy and perfect for this dish, but an 8 oz can is not near enough. I used 2 15 oz cans and it was perfect. I am going to try freezing the cabbage next time, b/c it is very time consuming - but in the end worth it. I would also season the meat quite a bit before cooking (onions, garlic, etc). I used 99% FF turkey and it worked well. Cook time was right on, I assembled the night before and put on in the morning. Served w/mashed potatoes. YUM! Definitely making again!

Baked Spaghetti Squash Lasagna Style

really easy and tasty! I layered it w/fresh spinach and baked it in a dish. 385 for about 40 minutes. My husband even liked it and he was doubtful. I will definitely make again!

So easy, so tasty! We baked it at 425. I think using fresh green beans is essential. Will definitely be making this again and again!

Amazing healthy crust. Followed the recipe exactly, but I did bake in a much hotter oven. Could not be easier, will make this all of the time, thanks so much!

Spinach Enchiladas

Reviewed: Aug. 7, 2010
Made this last night and it was soooo good! I used fresh spinach, cooked it down a bit w/the onion and garlic. I didn't measure anything, not really important with this recipe. Next time I think I'll just use ff greek yogurt mixed w/some cheese for the mixture. I think you could make this with zucchini as well. I used Frontera enchilada sauce, medium - it was really good. Great weeknight meal, very quick. Will go into the rotation for sure.

Key Lime Pie VII

Reviewed: Jul. 6, 2010
So easy, so tasty! I used regular limes, the recommended 3/4 C, used 2 cans of FF cond milk and reduced fat sour cream. It did take a lot longer in the oven than the recipe calls for. Can't beat it!

Acorn Squash with Sweet Spicy Sausage

Reviewed: Oct. 16, 2009
very good, very easy. I used turkey sausage and added a bit of red pepper to make it a little more spicy. I halved the squash and put it in the microwave in a glass dish w/a bit of water. Probably a total of 10 minutes is fine. Cooked the sausage and pre-heated the ove to 400 in the meantime. Added a tiny bit of butter (don't think I will next time) and brown sugar to the bottom, stuffed w/sausage, then brown sugar and bread crumbs on top. Cooked in oven for about 10 min then a quick broil. Very good and very filling!

Aunt Bert's White Cake

I am not a good baker at all but I made cupcakes with this recipe and they turned out awesome! Super moist, great texture and flavor. I did use 2 whole eggs and added a packet of vanilla pudding. Can't wait to try different variations with different flavors of pudding. For cupcakes I baked for 20 minutes. Thanks for the recipe, it's a keeper!

Cake Balls

Reviewed: Jan. 4, 2009
eeeks, I was really excited to try this recipe b/c of all of the great reviews. I didn't think there was anything special about these at all. They were barely average taking into consideration the time it took for these. There is a similar recipe using cream cheese and oreos which is so much better than these. I used red velvet cake w/cream cheese frosting and white chocolate.

Fantastic recipe. Our crockpot is pretty big so the sauce wasn't covering all of the sausage. We threw in some beer (micro) and let it simmer for a few hours. Delish!

Baked Cheese Olives

Reviewed: Dec. 11, 2003
I love olives and was very eager to try this recipe. How disappointed I was! I would say this was average at best. The breading was really good, but just didn't taste that great w/the olives. I'm glad I tried this before serving at my party. The dough was easy to cover the olives though. Oh well.....

These are fantastic. I will use a spay on the pan next time to cut down on butter. Also used some garlic powder and red pepper flakes. Freeze very well, taste just as good re-heated. I'm making these for a cocktail party on Friday. Thanks for the recipe!
