To Die For Blueberry Muffins
I rarely write reviews on recipes, but these were a major hit! I used huckleberries instead of blueberries and they were frozen instead of fresh and I needed to add more flour/sugar to the topping to get it to be a crumby consistency but other than that I followed the recipe as written. I filled them to the top and they rose perfectly without spreading over the edge of the tins. I noticed some other reviews stating that the topping made the muffins greasy. I didn't have butter pockets like one reviewer, but the paper cups were a little greasy. Once you took the muffins out of the cups however, they were not greasy at all. Hubby is asking me to make more - so I will probably make another batch today. PS. By filling the pan to the top, I got 9 large muffins.

Ciabatta Bread
I am somewhat of a beginner to making bread but have tried several different types and this by far is my favourite. MY husband LOVES ciabatta bread and it is difficult to come by in my area. I tried this, having relatively low expectations, and was pleasantly surprised with the flavour, texture and appearance. The crust was chewy and the inside was moist and soft. The only things I did differently was I proofed the yeast first in the warm water for 20minutes. I also used all purpose flour instead of bread flour and the dough was the perfect texture for ciabatta - rather wet but still a workable dough.

No-Bake Chocolate Coconut Cookies
I must say that I didn't follow the recipe 100% - I used butter instead of margarine and I added about 100g dark chocolate to the butter/sugar/cocoa mixture. I also added about a 1/2tsp salt. They were great. They hardened very well and the taste was excellent. I made two double batches as I will be serving them at my wedding:)
