Cake Balls

I made three cakes and ended up with thousands of cake balls, lol! Seriously, three cakes makes a ridiculous amount of treats. I mixed strawberry cake mix with vanilla frosting, confetti cake with chocolate frosting, and devil's food cake with cream cheese frosting. I loved the strawberry combo, my hubby preferred the devil's food cake. I should have heeded reviewer's warnings and only used half of the container of frosting because using the entire container AND dipping each one in chocolate creates a very sweet dessert. Almond bark is tasty and buying a package is a lot cheaper than paying for the convenience of pre-made dipping containers which are obsolete after only a few balls. This is such a fun, cheap, and easy recipe that I can't wait to experiment with it again and again!

Sweet Potato French Toast

This recipe is so nutritious, quick, and easy that I've been making it for my 1 year old eveyday for the past week! My only changes are that I use more sweet potato to make it healthier, add a dash of vanilla extract, and use whole wheat bread. It takes two seconds to whip up and mommy gets to eat the leftovers!

Artichoke & Spinach Dip Restaurant Style

To die for! To completely drain the spinach, I place it between two plates and squeeze. Works like a charm. I buy the quartered artichoke hearts to save time on chopping and actually mash them with a spoon while mixing all of the ingredients together (a must). Perfect quick, easy, and delicious recipe. Scoop it into a hollowed out bread bowl for a nice presentation.

Deep Chocolate Raspberry Cake

Perfect for any chocolate lover! I doubled the filling, as recommended. It was a little crumbly, but this may have been due to overbaking. Would definitely make this again and again!

Italian Spaghetti Sauce with Meatballs

The sauce was great! As suggested by others, I used one can of whole tomatoes and two smaller cans of diced tomatoes. I was disappointed with the meatballs though. I will definitely decrease the amount of breadcrumbs next time, that was all I could taste. I also increased the parmesan to 4 oz in the meatballs but the breadcrumbs were so overwelming, I'm not sure if it made a difference.

Pecan Rice

Following the directions on the package of rice, I used 2 cups of water (1 1/2 cups of low sodium chicken broth and 1/2 cup of water to be exact). The chicken broth was a great suggestion and I'm glad that I used it instead of plain water. I read on another site that cinnamon is a good substitute for ginger, it is not! It really changed the flavor of the rice which I enjoyed, but my hubby did not. Left the parsley out and didn't even miss it.

Fruity Curry Chicken Salad

The BEST chicken salad recipe ever! I increased the curry powder to 1 1/2 tsp, used regular raisins, and used two celery stalks for added crunchiness. Also used canned chicken in a pinch (two large cans) and it came out perfect! It will be tough, but wait at least a day before eating and it will be well worth it!

Spanakopita (Greek Spinach Pie)

I used two 10 oz boxes of frozen spinach, dried the heck out of it as suggested, some extra garlic, salt and pepper, 8 layers of phyllo on top and bottom with butter instead of olive oil and OMG it was delicious!!! My bf loved it and took tons to work for a long weekend. Thank you Silverwolf and everyone for sharing their wonderful tips!

Spinach Quiche

I took other reviewers' advice and brushed the crusts with egg whites and baked it for about 7 minutes to prevent a soggy bottom and it came out perfect! I did use the entire stick of butter (my bf loves butter) and I used two crusts instead of trying to fit it into one pie. I'm going to try and give away one of them so I don't eat it all because it is so freaking good, yum!

Banana Banana Bread

I've made this a couple of times already and it's a great recipe. I have a really small oven and I've had some issues coming up with a good baking time because the recipe's recommended time would burn it to a crisp! Overall, a good recipe!

Cabbage Roll Casserole

I made the recipe exactly as it says, except I left out the oil when I browned the beef and it turned out pretty bland! To add some flavor I added a bunch of Adobo (spanish seasoning) which made it a lot better. It still seemed like there was something missing, so added four slices of pre-sliced cheddar cheese to the casserole, mixed it up, and it was finally perfect! I never salt my food so I was surprised that no one else really found it to be bland, perhaps the modifications most made added enough flavor. I will definitely make this recipe again, with my modifications of course!

Avocado Dessert

I love this recipe! I changed it slightly by using Splenda granular instead of white sugar and it tastes really good! So glad I found this recipe, I had an avocado and milk to get rid of and this used up both! Will be sharing with the girls at work.

Cheese Cake Cups

I LOVE this recipe and so does everyone else. I get requests for birthdays and potlucks at work all of the time. I suggest reading the cheesecake tips on this site, it helped a lot. I've made this so many times that I experiment with it. I crush up oreo cookies and mix it in the batter as one variation, or I'll pour some of the plain mix into the muffin liner then place a flattened candy miniature in it then fill the rest up with the mix. I have also used a pulled apart oreo as the bottom instead of a wafer, have fun trying new things!

Hot Fudge Ice Cream Bar Dessert

The recipe worked great, I added a little extra peanut butter because my friends and I love it. I made the regular recipe for them but made a lower fat version for myself using low fat ice cream sandwiches and banana slices instead of whipped topping and it too came out delicious, try it! Perhaps next time I'll use crunchy peanut butter to cut out a step.

Peanut Butter Ice Cream Pie From Nestle® Nesquik™

I absolutely love peanut butter and chocolate and both together, this is a must for anyone who feels the same. Save yourself some time and money and just buy crunchy peanut butter (unless you want peanuts to sprinkle on top) I thought it was too much peanuts so i didn't do that or sprinkle the cookie pieces on top and it was delicious!

Awesome Carrot Cake with Cream Cheese Frosting

I made the cake for my dad for Father's Day and ended up having enough for two cakes. My boyfriend and his friends were hanging out when I offered the extras they absolutely loved it, so did my dad. It really is awesome! I guess the massive amount of oil gives it that extra moistness most cakes don't have.
