Easy Indian Butter Chicken

Reviewed: Apr. 1, 2015
I've made this so many times and I just made the perfect version!! I used chicken thighs for more flavor, used 2 tbsp of Garam Masala and 1 tsp of curry powder instead of the tandoori. I rubbed the chicken pieces in olive oil and generously applied curry powder. I omitted the heavy cream and used fat free evaporated milk. I kept the 1 cup of butter because, hey it's butter chicken!!! I also simmered the chicken in the sauce for 30 minutes instead of 5 minutes. I served it over one of those 90 second Brown Basmati pouches for convenience. Next time I will buy two pouches because the chicken went fast!! My four year old ate more than I did!

Eggplant Lasagna

Reviewed: Mar. 17, 2014
I have been making this recipe for over a year now and the whole family loves it! I don't quite use two whole eggplants, probably 1 1/2. I also brown hot Italian turkey sausage in place of the beef and it gives it a healthy and delicious taste! Instead of flipping the eggplant, I turn the broiler on and it gets the job done. A must try, even for those who aren't in love with eggplant.

Sweet and Sour Pork III

Reviewed: Jan. 29, 2013
Restaurant quality! This recipe was so good, it smells and tastes like you ordered take out. I bought a bag of frozen stir fry veggies and let them thaw out before mixing. I didn't have apple cider vinegar so I mixed some red wine vinegar with a little water to dilute it. I added it slowly and stopped after I had the desired taste (it didn't take much). Served it over fried rice and it was to die for! Next time I will try it with chicken.

Jimmy's Mexican Pizza

Reviewed: Jan. 29, 2013
Soooo good! I used ground turkey, lessened the chilli powder so as not to be too spicy, whole wheat tortillas, and left out the refried beans. I added some extra cheese and some olives here and there and it was heavenly!

Strawberry Cake from Scratch

Reviewed: Jan. 29, 2013
Fabulous! I had all of the ingredients except for the strawberry puree, so I added a little extra jello mix and voila, perfection! I made them into cupcakes for my son and whipped up some vanilla frosting to top them off. I can't wait to try it with the puree next time!

Feta and Sun-Dried Tomato Stuffed Chicken

Reviewed: Jan. 6, 2013
This came out delicious! I didn't have Greek seasoning so I used Italian instead. I also left out the lemon juice/zest to suit my family's likes. I bought sun dried tomato paste from the local supermarket and it worked like magic! The end result was delectable and looked like it should be served at a restaurant!

Cake Balls

Reviewed: Dec. 27, 2011
I made three cakes and ended up with thousands of cake balls, lol! Seriously, three cakes makes a ridiculous amount of treats. I mixed strawberry cake mix with vanilla frosting, confetti cake with chocolate frosting, and devil's food cake with cream cheese frosting. I loved the strawberry combo, my hubby preferred the devil's food cake. I should have heeded reviewer's warnings and only used half of the container of frosting because using the entire container AND dipping each one in chocolate creates a very sweet dessert. Almond bark is tasty and buying a package is a lot cheaper than paying for the convenience of pre-made dipping containers which are obsolete after only a few balls. This is such a fun, cheap, and easy recipe that I can't wait to experiment with it again and again!

Sweet Potato French Toast

Reviewed: Nov. 7, 2011
This recipe is so nutritious, quick, and easy that I've been making it for my 1 year old eveyday for the past week! My only changes are that I use more sweet potato to make it healthier, add a dash of vanilla extract, and use whole wheat bread. It takes two seconds to whip up and mommy gets to eat the leftovers!

Artichoke & Spinach Dip Restaurant Style

Reviewed: Nov. 7, 2011
To die for! To completely drain the spinach, I place it between two plates and squeeze. Works like a charm. I buy the quartered artichoke hearts to save time on chopping and actually mash them with a spoon while mixing all of the ingredients together (a must). Perfect quick, easy, and delicious recipe. Scoop it into a hollowed out bread bowl for a nice presentation.

Deep Chocolate Raspberry Cake

Reviewed: Nov. 7, 2011
Perfect for any chocolate lover! I doubled the filling, as recommended. It was a little crumbly, but this may have been due to overbaking. Would definitely make this again and again!

Italian Spaghetti Sauce with Meatballs

Reviewed: May 26, 2011
The sauce was great! As suggested by others, I used one can of whole tomatoes and two smaller cans of diced tomatoes. I was disappointed with the meatballs though. I will definitely decrease the amount of breadcrumbs next time, that was all I could taste. I also increased the parmesan to 4 oz in the meatballs but the breadcrumbs were so overwelming, I'm not sure if it made a difference.

Pecan Rice

Reviewed: May 26, 2011
Following the directions on the package of rice, I used 2 cups of water (1 1/2 cups of low sodium chicken broth and 1/2 cup of water to be exact). The chicken broth was a great suggestion and I'm glad that I used it instead of plain water. I read on another site that cinnamon is a good substitute for ginger, it is not! It really changed the flavor of the rice which I enjoyed, but my hubby did not. Left the parsley out and didn't even miss it.

Fruity Curry Chicken Salad

Reviewed: Feb. 24, 2011
The BEST chicken salad recipe ever! I increased the curry powder to 1 1/2 tsp, used regular raisins, and used two celery stalks for added crunchiness. Also used canned chicken in a pinch (two large cans) and it came out perfect! It will be tough, but wait at least a day before eating and it will be well worth it!
