Hey all! So glad you like it. I totally agree, making a roux is a good idea. Or, you could add some diluted corn starch to the end to thicken it - mom does that and I forgot to add that part!

Vegetable Chowder

Shoulda doubled the recipe! We loved it! I followed almost exactly but omitted the flour for a little corn starch in cold water. I think I used at least 2 cups of cheese and was very pleased. Next time Ill leave out the red pepper and maybe add some zucchini or cabbage. Great recipe! Thanks!

Baked Chicken and Zucchini

Quite good! We added yellow summer squash and some onions to the zucchini, only sauteeing the onions. Next time Ill sprinkle some salt and pepper on the veggies before the breadcrumbs. I served it with wild rice.

Wild Rice and Ham Casserole

I would rather give 4.5 stars as I think its a great recipe but did use some subs.. I used concentrated broccoli cheddar soup, only about 1/3C mayo, 1 head fresh broccoli (chopped) and lots of pepper. I really like this recipe. Next time Ill look for a creamed soup with less sodium as it was a bit salty. I put the dish under the broiler for a bit after adding the cheese to brown a bit. And I used a cup of wild rice mix, that cooked in 15 mins.

Quick and Easy Pancit

I used about 6 oz of vermicelli rice noodles as thats all I had on hand. I had a bag of broccoli slaw (broccoli, carrots, cabbages) so I just used that. I didnt have any lemon so I substituted lime. Turned out very good. Next time Ill try to use more noodles.

Wow. I was so excited for this dish. I loved the idea. But sadly its just not that good. Im eating it now and it is definitely edible.. but I wont be making it again. Im sorry!

Italian White Bean and Pancetta Soup

I love this recipe! Pork and Sage go so well together. I used smoked ham because I felt it might be less fatty than the pancetta. Im sure its good regardless. I did add what carrots I had (two small), and I used two cans of canelli and one can of great northern beans as thats what I had. I did not use salt but added garlic salt instead. And half way through simmering I took about 3 cups of beans/onions, etc and blended to achieve a thicker soup. It wasnt thick enough so I simmered with the lid off for a bit. Holy Cow this is good soup!

Strawberry Spinach Salad II

Perfecto! Holy Tamole this is exactly what I was looking for. I had a similar salad at a favorite eatery and hoped to duplicate it. I think this one was more exciting. I didnt have any of the seeds and I'm sure they would be fun but they arent needed. Somehow the sugar doesnt really dissolve (or maybe it was just mine) but it gives this crystalized texture to the salad that I really enjoyed. I used pre-cut strawberries (with a couple blue berries) from the deli. I tossed them in some sugar-water at room temperature while making dinner and they were pefect by serving time. I didnt combine the leaves(bagged), berries, almonds and dressing until the last minute. Wonderful.

Pomegranitini

I really like Cosmos.. and I LOVE pomegranites. I found the juice in the produce section of the supermarket and have been dying to try it in something. I only used 1oz of Gran Marnier and found these to be quite nice.

Bread Pot Fondue

I was really excited about this recipe. It has great potential. I omitted one pkg of cream cheese and the peppers. I felt it was still really rich. I tried warming the filling first and baking for 1hr 20mins didnt do it. Maybe it needed to be warmer? I would add more real cheese next time. But we found the bread bowl to be plenty of bread for dipping.

Chocolate and Vanilla Swirled Cheesepie

Very Good! I forgot to add the milk to most of the chocolate mixture, and cooked it too long so it was a bit stiff. I found that there was too much filling to fit in the pre-made crust. But this pie (or should I say "cake") pleased everyone who tried it. The warm raspberry jam really made it! I wouldnt let anyone have it without the topping! Fabulous!

Peanut Butter Candy Bars

Super easy.. fast too. I used a 9x13 pan.. used 1/2c less margerine than called for.. I bet you could use even less. I would have preffered more chocolate on top.. I thought they were extremely sweet.. but everyone in the office gobbled them up! Thanks!

Caramel Brownies II

Really good! I omitted the nuts, you never know who likes em.. I used semi sweet chips (milk chocolate seemed too sweet). And I took another users advice and flattened disks of dough between my hands for the top layer. These were soooo great! Everyone loved them.. I might never use another recipe!

Nana's Apple Crisp

Just about perfect! I used the cup of oats but didnt have cinnamon so I added a packet of cinnamon spice instant oatmeal. The added oats filled out the topping nicely. I used 3 granny smiths and 3 fujis.. The office loved it too!

Chili II

Fantastic! I didnt have bay leaf, cayenne or sage and I used a pot on the stove instead of a dutch oven. I used the sundried tomatoes that come chopped and in oil (nice time saver). I added red pepper flakes, black olives and a little tabasco.. turned out great! "The Guys" loved it! I fed 4 last night and have plenty left over too!
