Colorado Green Chili (Chile Verde)
Hey all! So glad you like it. I totally agree, making a roux is a good idea. Or, you could add some diluted corn starch to the end to thicken it - mom does that and I forgot to add that part!

Vegetable Chowder
Shoulda doubled the recipe! We loved it! I followed almost exactly but omitted the flour for a little corn starch in cold water. I think I used at least 2 cups of cheese and was very pleased. Next time Ill leave out the red pepper and maybe add some zucchini or cabbage. Great recipe! Thanks!

Quick and Easy Pancit
I used about 6 oz of vermicelli rice noodles as thats all I had on hand. I had a bag of broccoli slaw (broccoli, carrots, cabbages) so I just used that. I didnt have any lemon so I substituted lime. Turned out very good. Next time Ill try to use more noodles.
