Pineapple Cheese Casserole

Delicious!! I prefer to use pineapple tidbits. I omit the cheese, but it is still tasty. This will replace my aunt's pineapple casserole recipe.

Baklava

This tasted very good, though the texture wasn't as crisp as I would have liked. I ground the nuts (I used pecans) to a very fine powder. I added 1/4 cup of sugar to the nut mixture.

Focaccia Bread

This was very good and easy to make. I used a heaping tablespoonful of Italian Seasoning instead of the herbs, which made preparation even easier. I topped the dough with parmasean cheese and spritzed it with olive oil. It gave the bread a nice, brown color. The bread was a little on the dense side, but very tasty. I will make this agian.

No Bake Cookies III

This was much chewier than I expected; it was almost fudge-like. I know the oats are necessary to hold it together, but their texture isn't quite right. That's why I only gave this a 4. I made it in the microwave and it was wicked simple.

Sweet Corn Tomalito

This was delicious! Just like the tomalito at Chevy's. I didn't have masa harina, and substituted equal amounts of corn meal. I tried the mircowave version, and it worked perfectly. It was like a moist, sweet cornbread. This will definitely do in my recipe collection!

Double Chocolate Cookie Bars

These were wicked good. Everyone loved them. I made it in a 9x13 pan, and it needs to be greased. I would also recommend using 24 cookies for the crust, and an extra 6 for the top, as the crust was good, but thin. I left these out for 4 hours, and refrigerated them for 20 minutes, and they were still gooey, but good.

Apple Pork Chops

Italian Bread Bowls

This is a very good, tasty, crusty, white bread. I had problems keeping them round, so I have made alluminum foil bowls and also have used small, round pyrex dishes, coated the inside with non-stick cooking spray, and let them rise and cook in those. The crust won't brown as nicely, but they make beautiful bowls. I usually scrape them out and fill it with either that African Chicken Stew or a chili, anything that is hearty but saucy.

Fettuccine with Garlic Herb Butter

The noodles had a good flavor, but I agree with other reviewers that it lacked a sauce, and seemed a little dry. I used 1 tsp of the all the dried herbs. I also used 2 (uncooked) cups of shell pasta, which seemed to hold the herbs very well. I will try it again though, possibly adding milk and flour to make a roux.

African Chicken Stew

Very good and very spicy. I halved the recipe, but it still made 6 servings, as this is a very heavy dish. Used chicken breasts and a little less peanut butter. I would omit the garbanzo beans next time, I didn't care for their texture. I served them in bread bowls, which made this a complete meal. Next time, I would add a little more liquid for the bread bowls to absorb.

Chicken Kisses

A good dish. Very easy to make and expand. I cubed all the vegetables and combined them in a large bowl with the barbecue sauce. I found spraying the aluminum foil with non-stick cooking spray to be very helpful. I also left the chicken breast whole, and brushed it wil barbecue sauce. A little bland, but stayed very hot. I've experimented with other vegetables. I really like potatoes, carrots, and onions. The pineapple seemed too sweet and juicy. A real crowd pleaser.

Easy Apple Cinnamon Muffins

These muffins were very aromatic and moist and delicious. I added 1/2 more teaspoon cinnamon, reduced the oil to 1/4 cup, and increased the milk to 1/2 cup. I would recommend finely cubing one of the apples, and shreading the other. I used a different crumb topping. Also, this makes 12 muffins, not 6. This recipe is a keeper.
