Apple Banana Cupcakes

Very moist and good. I cut the apples into chunks and increased the cinnamon to 1 tsp and added 1 tsp of baking powder. They were really good.

Authentic Louisiana Red Beans and Rice

I made some changes to this and maybe that's why I didn't like it. I used Cranberry beans instead of kidney beans and skipped the sausage since that's not available where I am and wanted to make it a vegetarian version. I added some salt and pepper. It was pretty sausy, which is good, but it just didn't have enough flavor. I won't make this again. I'll try some other rice and beans version.

Chicken Breasts Pierre

This was great. Even my kids liked it. My son who swears he hates chicken ate it with ketchup, oh well. But everyone else really enjoyed it. I cut the brown sugar in half and used a sugar substitute, I added a chicken bouillon cube and omitted the salt. I will definitely make this again with my changes.

Vegan Black Bean Soup

Salsa Chicken Burrito Filling

This was okay and I might make it again but it really wasn't anything more than shreaded chicken with bbq sauce with a kick. I expected something a little more mexican but it really wasn't. It didn't taste too bad though.

Dijon Garlic Salmon

This was terrific. I made a few changes. I cooked in a skillet with some olive oil the onion and garlic and added some portobello and button mushrooms then added them on top of the salmon per the recipe instructions. It was wonderful. I made the same thing with chicken for my husband since he doesn't like salmon and he liked his too.

Stir Fried Asparagus

This was great with the changes I made, I actually was cooking from memory. I cooked in a skillet with some olive oil the garlic, added the asparagus then put about 1/2 cup of the teriyaki sauce in and covered it and let the sauce steam the asparagus. I actually like my vegetables on the soft side so I left it for about 10 minutes. It was wonderful.

Awesome Slow Cooker Pot Roast

This wasn't exactly what I expected but was pretty good. The 'gravy' was more like 'au jus'. The roast fell apart like pork barbeque. My husband and I liked it but the kids didn't at all.

Asparagus Portobello Pasta

This seemed kind of bland to me. I think if I make this again I will chop some cooked asparagus and toss that with the pasta and probably add more tomato sauce to the ground asparagus, olives and tomato paste to make it more saucey.

Baked Pork Chops II

This was really good and easy. I breaded the pork chops before browning and added button and portobello mushrooms to the onions. It was really tastey and had lots of good sauce. It reminded me of chicken catchatorry.

Baked Orange Roughy Italian-Style

This was really good. My fish hating husband even liked it and said he would eat it again. My kids said they liked it too. I made a few changes. I soaked my roughy in milk like previously suggested. Then I halved the salt and butter and added fresh chopped basil with the parsley. I also used home made bread crumbs instead of canned so my bread crumbs were larger. At the end I had some butter and bread crumbs leftover so I mixed them together and put them on top. Turned out good with the extra bread crumbs being crunchy. Not fishy either, which my husband hates.

Southwestern Turkey Soup

This was really good. A very different taste than my usual turkey soup. I added a can of black beans as previously suggested. I couldn't find avacados so I went without it and it was good.

this was good. i had to substitue almonds for pecans since i didn't have pecans. there was way too much sauce so i dumped all the sauce in the baking pan. turned out really good.

Pork Tenderloin alla Napoli

Everyone will think that I am crazy but here are my substitutions. First, I used a tsp of dried rosemary since I didn't have fresh. I also substituted evaporated skim milk for the cream. Finally I didn't have the olives so I substituted diced kosher pickles. I know it sounds crazy but even my fussy son ate it and liked it. My husband couldn't get past the look of the gravy with the milk and the chopped tomatoes and pickles so he would try it but I thought it was excellent. The pork was tender and moist too.
