Grilled Tomato, Onion, and Bread Salad

When I make this I don't grill the tomatoes. Instead I chop them and save the juice, add to a bowl with chopped cucumber and salt and pepper them. I then grill the bread (thick slices instead of skewered is easier), some bell peppers, and some onions. I also use balsamic vinegar.

Mile High Green Chili

I like more tomatillos than suggested so I doubled the amount and added some cilantro. I forgot to buy cream cheese so I added sour cream but will try with cream cheese next time. Overall this was an absolutely delicious meal! It did not make 8 servings- more like 5 (3/4 filled normal size bowls). I suppose it could be stretched to 8 if served over rice. Additional notes: after sitting for 2 days we realized that the tomatillo was overwhelming in the dish. next time I will try the recipe as is and update again.

Baked Potato Skins

These were crispy and delicious. I left off the bacon and they were still great! I made breakfast with the leftovers. I reheated the potato skins in the oven and scrambled some eggs with onion. I topped the potatoes with the eggs and some extra cheese- YUM!

Basic Broiled Chicken Breasts

The chicken was really good and super juicy. The only problem I had was the time. Next time I will cook it for 20 minutes bone side up and another 10 minutes skin side up.

Jalapeno Popper Spread

Delicious! I followed suggestions and used 6 fresh jalapenos and also used 1/2 mayo 1/2 sour cream! It was a huge hit. We tried it with homemade french bread and tortilla chips and honestly the chips were better for this dip.

Chicken Pesto with Fettuccine and Spinach

I added 3 fresh garlic cloves finely chopped to the recipe (mixed with the onions). I am not so sure it would be good without garlic. I also added frozen spinach because I didn't have fresh. Overall the recipe was good. We topped it with parmesan- it's also good with a sprinkle crushed red pepper if you like it spicy!
