Beef Tips and Noodles

This was great. I was going to take Dee Dee's suggestion and cook it for two hours at 275, but after only 1 hour of cooking, they were done and tender. I used fresh cremini mushrooms instead of canned though.

Pasta With Peanut Sauce

Brian's Favorite Sauce

This was very good. I used turkey sausage to lighten it up. Instead of tomato sauce I used San Marzano crushed tomatoes (they're the best). I was always skeptical about putting sugar in tomato sauce, but it was good - not too sweet.

I love this recipe. It's in regular rotation at my house. I always lighten it up with milk and cornstarch to replace the heavy cream, and it's still great!

Chicken with Chipotle

This was so good! I have the answer to the heat problem. Chipotle peppers don't always have the same amount of seeds in them, which is where the heat is. If you control the amount of seeds that go into your sauce, you control the amount of heat. I like to use a lot of peppers, for the flavor, so I try to get rid of most of the seeds so it's not way too spicy.

I made 1 loaf and 12 muffins. The loaf was good, although a little dry - I'll use more strawberries next time. The muffins were worthless - super dry.

Jalapeno Popper Spread

I thought that this was very good, yet needed a few changes. Like other reviewers, I baked it, and since I didn't have breadcrumbs, I used crushed butter crackers with the parm cheese and oil on top. I also put cheddar cheese in the cream cheese mix. With these changes it was perfect, but very spicy, so I won't use as many jalapenos next time.

Refreshing Cucumber Salad

This was delicious! I didn't use tomatoes, because they're not in season yet, but I can't wait to try it in a couple months with them. I'm used to a cucumber salad with oil and vinegar, and this is a great change.

Sausage Cheese Dip

I used San Marzano tomatoes and some oregano to make it more Italian and less Mexican for one of our football parties. One friend made the same dip (we didn't plan very well!) but she followed the recipe exactly. Both were really good, and you really couldn't tell much of a difference between the two.

What I loved about this recipe is it's a great starting off point and you can tweak it to your liking. I added extra garlic and lemon. We never need to buy the expensive pre-made humus from the store again!

Stuffed Pork Chops I
