Slow Cooker Reuben Dip

Wow, I LOVE this! The second time I made this, I let it cook a little longer and doubled the 1000 Island. We tried all kinds of dippers with it and, from another reviewer, I started with tortilla chips. I thought the dip was kind of meh, but then I tried with rye Triscuits. It was sooo good! Something in the rye just works.

Deluxe Waffles

I used this recipe today for the first time with my brand new waffle maker. I added 1 1/2 tsp. of vanilla, to make it just a tad sweeter and we all loved it here! I have a smaller waffle maker (makes 2 at a time) and each waffle was about a 1/2 cup of batter, so I ended up with 10 waffles. Definitely a keeper! Thanks!

Tomato Enchilada Bake

This was awesome! I miscalculated and had too much chicken mixture and took a phone call, so my salsa mixture cooked way, way down. I combined the mixtures and spread that over the top. I also didn't have the green onions, so I just chopped up a medium sized onion. I loved this--definitely a keeper!

Crunches

My mom used to make these when I was little and I just love them. A word of caution -- don't make these on a very hot/humid day or they won't set properly. I tried to make them for an August picnic and had to refrigerate them for them to set, but a few minutes out of the fridge and they were melty. I still ate them. With a spoon but, otherwise, these are yummy.

Bake Sale Lemon Bars

I used GOURMETMOMMY's suggestions, too. I loved this recipe. I used a 13x9 cake pan and had no trouble spreading the crust or it beind too done. They tend to get a little stick after a couple of days, but I'm okay with that! Next time I make these, I tihink I'm going to try and increase the crust by half. This was very good.

Lover's Beef Burgundy Filet

This was very good. I only marinated about an hour and a half, because of time constraints. I also did not use oyster sauce or clam juice, as I have a severe allergy to shellfish. I don't think I missed it, but does anyone have any suggestions for a substitute that won't, you know, kill me? Also, does make quite a bit of marinade. Thanks for the recipe!

Sunny's Creamy Chicken Pork Chops

I baked the chops for an hour @ 350, instead of doing it stovetop and it turned out wonderfully. I used less broth (about 10oz, I suppose) and uncovered the baking dish for the last 10 minutes or so. Used the sauce over rice. Finally got compliments from sister. None of us thought it was "chicken-y"--the flavors blended very well. Thanks for dinner!

Cola Pot Roast II

I LOVED this dinner. I made it for my mom and sister. My mom was full of complaints BEFORE she tried it. I used full dip and gravy packets and 10 oz. of Coke. As for the Coke making it sweet--I didn't really taste it, but I'm a Coke drinker. My mom still doesn't know I used Coke and if her meat had been overly sweet she wouldn't have eaten it. I will add more carrots (I think I'll do the baby carrot thing others have recommended), some mushrooms and potatoes to the pot next time. I used a dutch oven in the oven and the meat was very tender. It does make quite a bit of gravy, if I was a more experienced cook I would cooked it down some to thicken (didn't want to mess anything up), but it was very good. Thanks.
