I made it using 1/2c white sugar and the rest of the 1/3c sugar as brown sugar. It made 6 regular-sized muffins and 24 minis, and I'm waiting for the mini muffins to cool down so I can taste this! (The batter was great, so I've got high hopes for these little guys.)
If you're making mini-muffins, 12 minutes is a good amount of time to bake evenly all the way through. I wasn't the most even in my batter distribution (some are noticeably taller than others) but they all baked all the way through in about 12 minutes.
....they've cooled enough, lemme at 'em! And the verdict is...delicious! Making these was a great way to christen my mini-muffin pan. :)
I think next time, though, I'm gonna sprinkle sanding sugar on them. I do tend to prefer my cornbread a little sweeter. I can't wait to make these again!
