BLUEBERRY COCONUT MUFFIN TOPPED W/ STRUESEL & CREAM CHEESE ICING
About this Cook
I'm a Kentucky girl but moved to Indiana with my husband 5 years ago. I've always loved being in the kitchen and one of my fondest memories is from before i was able to really "help" in the kitchen. So, as a little girl, my mamaw would sit me in the kitchen floor with a bowl of water and I'd tear up pieces of bread, put them in the bowl, and mix them up with her manual rotary mixer (see pic). I've always loved cooking & trying new recipes, but here lately I find myself baking up a storm. My love for baking actually began when I was working in a bakery at a restaurant. There I fell in love with baking & cake decorating. I love decorating cakes, sweet breads, cupcakes & anything else that don't run away from me. Outside of the kitchen I enjoy riding on the back of my hubby's Harley, kayaking, writing, dancing, Zumba, and walking around our pond with our 5 dogs--3 black labs & 2 yorkies.
My favorite things to cook
Southern dishes & anything Italian, my Granny's recipe for soup beans {not bean soup, there's a difference}, pies, cobblers, and cakes that I can decorate creatively! :)
My favorite family cooking traditions
I love making candy and baking different types of cookies with my aunt at Christmas time and helping prepare Thanksgiving supper with my pastors and their teenage kids. Also, I cook potluck dinner every Sunday with the youth at church. They definitely keep things in the kitchen loud and interesting!
My cooking triumphs
Making my 1st & so far only wedding cake for my Momma. Baking 25 yule logs at Christmas. The number seems to increase each year as friends and family request them for work or friends.
My cooking tragedies
Anytime my Christmas yule logs break apart its a tragedy LOL! The 1st time I made my Granny's soup beans, I thought I'd use a crock pot becuase my stove was out at the time. I didn't realize that the beans would get so big! Needless to say, I came home from church to a crock pot that resembled a volcano with lava beans oozing out down the sides. What a mess! My Momma & I had a good laugh for years to come over that! Another messy situation I found myself in was at my 1st job. I was 17 & worked for a seafood restaurant. The cook handed me a pot of clam chowder & told me to put it in the clam chowder pot. The clam chowder pot was an electrical pot resembling a witch's caldron. Dutifully, I poured the clam chowder into the pot & passed the empty pot back to the cook. She looked puzzled & asked me where all the clam chowder went. "Into the pot", I said. That's when I learned that the silver pot was to be SET DOWN into the electric pot! I had NO idea! LOL!

CINfully Delicious Chocolate Cupcakes
WOW WOW!! THESE ARE SOOOO RICH & DECADENT! I MADE MINI CUPCAKES & AS WITH MOST RECIPES I GET FROM HERE, I TOOK THEM TO CHURCH POTLUCK. EVERYONE RAVED ABOUT THEM, EVEN MY PASTOR WHO ISN'T MUCH ON SWEETS. I DIDN'T ADD ANY ADDITIONAL POWDERED SUGAR TO THE FROSTING AND PIPED IT USING A PASTRY BAG/TIP AND IT CAME OUT LIGHT AND FLUFFY, A MOUSSE LIKE TEXTURE. PERFECTION!!!! I GIVE THIS 5 * * * * * !!!!!
