Easy Broccoli Salad

This was fantastic! Cut the olive oil in half because I thought it might be too oily. It was great like that. It's a definite keeper for us. 3 of us ate it all up it was so delicious with a little bit left for hubby's lunch tomorrow. Follow Chef John's video. I just have to add to my review: we have made this several times since my last rating and I LOVE this stuff!! I follow the video exactly for cutting it and putting it in cold water to stop the cooking. I do cut the oil though, because it would be way too oily if we did not. When I make it now I have to make extra we love it so much. I have never been a fan of broccoli in the past and do not really care for it raw. But I have become a fan of broccoli because of this recipe. It is simple to make and the red pepper flakes give it a nice appearance and pizzazz if making it for company.

Microwave Pralines

First I made 4 separate batches. I tried whipping cream, half and half, and margarine and butter. I tried various combinations to see what I liked better. All came out excellent, but I preferred butter with half and half. I am from New Orleans and this recipe is fantastic and just as good as any traditional recipe!! Later I made 5 more batches and this is what happened. The first 2 did not firm up well. I just scooped them back I the bowl and remicrowaved them. They came out great. I then tripled the recipe to make another large batch. I was very careful because I wasn't sure if this batch would set up. I microwaved it about 30 min in all and kept checking and stirring. About 3-4 times in all. I also used the trick from another reviewer and dropped a tad in ice water. When it balled up, I knew it was ready. This was the best batch of all!!! They we're lose enough to allow the praline to spread out like a traditional praline does. Also, on the others, I did not butter the parchment paper and they were fine, but it is definitely easier and comes out nicer if you butter the paper prior. This is a FANTASTIC and EASY recipe!!! I will NEVER make pralines on the stove again!!! Highly recommend!! Thanks so much!!

Clinton's Special Vegetarian Quiche

Loved it. I followed others advice on using phyllo. I used fat free cottage cheese and fat free cheddar cheese. I sautéed the onions in a small amount of cooking spray. I added fresh spinach to the onions and 1/4 tsp nutmeg & 1 tsp water. I actually ended up using 3 cups of fresh spinach cause it shrunk down and it appeared to need more. I mixed it all up with cheese and eggs and poured it on top of the tomato. This was delicious. We loved it and I will definitely make it again. Also, I did what the other reviewer suggested and sprayed the phyllo every 3 sheets, I sprayed it all at the end and baked at 400 for 10 min. When I put the quiche in to bake I covered the edge with tin foil so the phyllo would not burn. LOVED IT!!!! Okay, now that we have eaten the leftovers we are more in love with this recipe. I am planning next time to do as a reviewer suggested and make it without any crust to bring the calorie and carb content down. I am going to add shrimp and increase the nonfat cottage cheese. The leftovers on this were awesome!!!!

Deep Fried Oreos®

This was quick, and easy. The batter was a little runny I thought. I added about 3/4 cup more of batter and an extra egg to get the batter much thicker. I also used a frying pan ad less oil. This was great. We sprinkled confectioner's sugar on them. They came out similar to New Orleans beignets! This was fantastic. Very rich.

Sam's Famous Carrot Cake

Spectacular!! This cake is amazing. I followed the recipe exactly. However, used 2, 9 inch round pans and used cooking spray to prepare. Reduced cooking time by 15 minutes as suggested in the reviews. This recipe is a keeper! Thank you to Sam's legacy :-)

Au Gratin Potatoes II

I doubled this recipe. I used 5-6 average size white potatoes.  I peeled, then sliced and halved and quartered the slices so they were not large, I used 1 can cream of celery soup & one can cream of chicken soup. All other ingredients were doubled. For the topping I used a Ruffles potato chips. I crushed them up fine and mixed them with the butter. I then sprinkled them on top and put the potatoes back in the oven under the broiler long enough to make the topping crispy brown. Maybe a minute or so. These potatoes were excellent and I will definitely make them again. Also, because everyone said theynwould take longer to cook, I put them in the microwave for 15-20 min before I put them in the oven to take the edge off of how long they would need to cook. I then cooked them in the oven for 40 min, finishing with the broiler to make the topping crispy. This recipe is very kid, teenager, anybody friendly :-)

Zippy Shepherd's Pie

I am so upset. I followed the recipe exactly. The soy sauce was so strong in it. Maybe it was the curry. My 20 year old son who eats anything and had asked me to make shepherd's pie thinks it tastes like Chinese food. It is either the curry,or soy sauce, not sure. He will not eat it. If he does not like it,it is to likely my husband and other kids who are not home yet will like it. Homemade mashed potatoes and everything. I do not like it either.

Easy OREO Truffles

I do not have much experience with baking so I was a little tentative. However, they came out excellent. My family loved them. I listened to one review and broke the two middle prongs out of a plastic fork for rolling the balls in the chocolate. Excellent idea. It worked great. I also added about a half tblspn Crisco to the chocolate as suggested and this worked fantastic to make the chocolate smooth and creamy. I microwaved the chocolate also which worked fine. Following the suggested tips resulted in this recipe being easy and successful for me to accomplish!! Thank you.

Quick Crescent Taco Pie

This was excellent!! Since some reviews had talked about blandness I Was concerned. I put 2 packages of taco seasoning in one pound of ground meat. I added 1 can of Great Value Tex Mex tomatoes, and 1 large can of refried beans, all to the meat mixture. I also put green onions on top before baking. Upon coming out of the oven, I added fresh chopped tomatoes for color. May family loved it.mit was fantastic!!

The Best Parmesan Chicken Bake

Because all the reviews expressed oncern over the chicken not having enough time to cook, in the morning I put 6 chicken breasts in the crockpot. I cooked them till tender and then removed them to the fridge in the afternoon. That evening I put the recipe together, taking the cooked tender chicken out of te fridge. I was a little worried the chicken might dry out, but it didn't. It was ver tender, moist, and this recipe was great. The top did start to get too dark and I put tin foil over it. My family loved it. My picky boys had second helpings.
