Microwave Pralines

First I made 4 separate batches. I tried whipping cream, half and half, and margarine and butter. I tried various combinations to see what I liked better. All came out excellent, but I preferred butter with half and half. I am from New Orleans and this recipe is fantastic and just as good as any traditional recipe!! Later I made 5 more batches and this is what happened. The first 2 did not firm up well. I just scooped them back I the bowl and remicrowaved them. They came out great. I then tripled the recipe to make another large batch. I was very careful because I wasn't sure if this batch would set up. I microwaved it about 30 min in all and kept checking and stirring. About 3-4 times in all. I also used the trick from another reviewer and dropped a tad in ice water. When it balled up, I knew it was ready. This was the best batch of all!!! They we're lose enough to allow the praline to spread out like a traditional praline does. Also, on the others, I did not butter the parchment paper and they were fine, but it is definitely easier and comes out nicer if you butter the paper prior. This is a FANTASTIC and EASY recipe!!! I will NEVER make pralines on the stove again!!! Highly recommend!! Thanks so much!!

Easy Hummus

Fixed it exactly as recipe stated and loved it. However, next time I will cut back on the garlic. We are garlic lovers. I always double, even triple garlic in a recipe so I ignored comments about it being too much garlic. WOW, it was too much garlic even for us. I am looking forward to tweaking and trying some of the variations suggested by others. So glad to finally find a hummus recipe without tahini which brings the fat calories way down!! Thank you :-)

Oatmeal Chocolate Chip Cake

This is awesome!! I followed others advice and increased my cocoa to 3 Tblspns. I got carried away only because I had extra chocolate chips. I added quite a bit extra chocolate chips. I cooked it and stopped at 35 minutes as suggested by another. However, not only was it not ready,it required an additional 15 minutes! So it baked 50 minutes in my oven. It was moist and wonderful and we will fix this again. I will probably play with it a little and follow some of the suggestions of other reviewers. It's a keeper!!!

Killer Bacon-Cheese Dogs

Caribbean Sweet Potato Salad

This was good, but not spectacular, so I only gave it 4 stars. I used just sweet potatoes and they were both large. I am not sure if perhaps they soaked up all the dressing, but the salad seemed to need more dressing, or more of a kick. I will make it again and use smaller potatoes, and maybe double the dressing?

Clinton's Special Vegetarian Quiche

Loved it. I followed others advice on using phyllo. I used fat free cottage cheese and fat free cheddar cheese. I sautéed the onions in a small amount of cooking spray. I added fresh spinach to the onions and 1/4 tsp nutmeg & 1 tsp water. I actually ended up using 3 cups of fresh spinach cause it shrunk down and it appeared to need more. I mixed it all up with cheese and eggs and poured it on top of the tomato. This was delicious. We loved it and I will definitely make it again. Also, I did what the other reviewer suggested and sprayed the phyllo every 3 sheets, I sprayed it all at the end and baked at 400 for 10 min. When I put the quiche in to bake I covered the edge with tin foil so the phyllo would not burn. LOVED IT!!!! Okay, now that we have eaten the leftovers we are more in love with this recipe. I am planning next time to do as a reviewer suggested and make it without any crust to bring the calorie and carb content down. I am going to add shrimp and increase the nonfat cottage cheese. The leftovers on this were awesome!!!!

Dos Queso Dip

I made this for a potluck and everyone loved it. It was a big hit!! I did throw in half of a jalapeño finely diced and about 1/4 cup finely chopped red onion like someone suggested. I also added an extra cup of pepper jack cheese because of others comments and it did not seem like there was enough cheese.

Easy Broccoli Salad

This was fantastic! Cut the olive oil in half because I thought it might be too oily. It was great like that. It's a definite keeper for us. 3 of us ate it all up it was so delicious with a little bit left for hubby's lunch tomorrow. Follow Chef John's video. I just have to add to my review: we have made this several times since my last rating and I LOVE this stuff!! I follow the video exactly for cutting it and putting it in cold water to stop the cooking. I do cut the oil though, because it would be way too oily if we did not. When I make it now I have to make extra we love it so much. I have never been a fan of broccoli in the past and do not really care for it raw. But I have become a fan of broccoli because of this recipe. It is simple to make and the red pepper flakes give it a nice appearance and pizzazz if making it for company.
