Low-Fat Blueberry Bran Muffins

These turned out moist and delicious. I used nonfat greek yogurt instead of applesauce, 1-1/2 tsp vanilla, 1/2 tsp ground allspice and 1/3 cup brown sugar and 1/3 cup splenda baking sugar, 2 cups frozen blueberries. They were about 107 calories and yummmmy.

Slow Cooker Cheese Steaks

This turned out delicious. Followed the recipe other than putting salt, pepper and some onion powder on the meat before cooking. It was tender and fantastic.

Refried Beans Without the Refry

These are WAY TOO SALTY. Other than that they are fantastic. I am cutting the salt down to 2 tsp, and I confess to adding a bit of milk. They are amazingly good, but the original recipe has far, far too much salt.

One Bowl Buttercream Frosting

I wanted vanilla frosting (so did not use the cocoa) but this ended up too sweet, so I added 4 oz of cream cheese and it was fantastic. Super easy and very good.

Slow Cooker Mole-Style Pulled Pork

Followed the recipe to the letter. The cinnamon was overwhelming and it was extremely blah otherwise. It was difficult to even use the leftovers in any way due to the cinnamon. A big thumbs down from the entire family. I don't really think there is any way to salvage this recipe.

Cocoa Oatmeal Cookies

Quick and easy, yes, but very bland. They are not sweet at all. I even tried sprinkling with powdered sugar after cooking to try to perk them up, but they are really pretty tasteless and not worth wasting any calories on. I don't think I will be making these again.

Traditional Pita Bread

I just pulled these out of the oven and every single pita puffed and has a perfect pocket. They are a bit "chewy" but perfect for stuffing with sandwhich fixings, which is what I was looking for. I mixed in my stand mixer and did flip before baking, baked for 6 minutes on greased cookie sheets and had 100% success. I had just made whole wheat pitas the prior day and they were hard and had only partial pockets. Will try 1/2 and 1/2 mix of flour next time.
