Gourmet Mushroom Risotto

Excellent! I followed the recipe except I reduced qty of mushrooms to 1.5 lbs total and used mix of portobello, crimini, chanterelle and dried porcini. Also I used the broth from reconstituting the porcini plus Pacific brand Mushroom Broth rather than chicken. Like others, I added some garlic with the shallots. I doubled the recipe for party of 12 -- everyone loved it!

Very good, super easy. Makes meat incredibly moist. Just be careful of the seasoning you use so it does not burn.

Butternut Squash and Turkey Chili

Quite tasty. Even my 8-yr old who does not like a lot said, "Yum!" Also very straightforward to make. The only changes I'd make are adding a bit more broth to make it soupier (1 c total), a bit more meat, like 1.5# total, and a bit more spices, like adding 1 T of Ancho chili powder and a few dashes of Buffalo Tabasco Sauce.
