Cranberry Nut Granola Bars

AMAZING. I have eight children and they love granola bars. I have tried to make some before but they were crumbly and dry. I didn't like the "glue" being honey and oil.....this "glue" is awesome. I used sweetened condensed milk from this site, simply calculating it for 14 oz. AMAZING taste.

Whole Grain Breakfast Cookies

I love this cookie. It tastes better, in my opinion, with almond butter, but I usually have just peanut butter on hand and it's still a great tasting breakfast cookie. I am still not sure if Canola oil is good or bad for the body so I opt for half applesauce and half coconut oil (or olive oil).

Harvest Rice Dish

The flavors of this dish are amazing. I made this early in the day; I made each rice separately since they had different cooking times but otherwise followed the directions exactly. I served it with a great salad, bacon-wrapped green beans and filet mignon. For dessert: white chocolate raspberry mousse fom this site. Rave reviews from my guests!

Butternut Squash Soup

I have made this twice. Both were amazing. Second time was easier because I simply baked the squash (cut open, remove seeds and place flesh-side down on aluminum foiled pan) for an hour. I sauteed onion, boiled the water then combined all with the squash and seasonings. I pureed with little hand-held blender. So easy! The flavor is incredible; I added heavy cream because I am out of cream cheese.

Grandma Johnson's Scones

I made these tasty scones twice and the second time I used my food processor. That made it so much easier! As I dumped out the dough I added a cup of white chocolate chips and worked that into the dough. Then I split the dough into fourths and formed each section into a six inch circle. I then spooned raspberry jelly on one surface and then placed a second circle on top. It was somewhat equal. :) I cut 8 pie-like wedge pieces then placed them on an air-bake cookie sheet. (my other cookie sheet burned the bottom before the middle was done!). I repeated for the other two circles, making a total of 16 scones. To make prettier, I drizzled white chocolate on the top. They were fabulous. I gave them as gifts.

Sangria! Sangria!

We had a Sangria taste-off. I used this recipe and my "authentic" friend from Panama used his grandfather's recipe. I won. I use blackberry brandy and the cheapest bottles of wine. I also let it sit in the fridge THEN freeze. Why? I have large parties and never know how much of this to make. So I make six batches and freeze. I put a frozen section into my punch bowl and pour Sierra Mist over the top and it gets slushy. (Alcohol doesn't really freeze solid.). I then add fresh oranges and raspberries. (I have also added fruit at stage one and frozen it. That allows the berries to soak up the alcohol; I prefer fresh berry taste vs. laden with brandy.) Making it ahead allows me to focus on other things the week of the party, knowing my Sangria is done. Everyone asks me for this recipe. I claim it as my own. :)
