Banana Crumb Muffins

My family really enjoyed these and they were easy to make. My streusel topping didn't turn out quite right but I think that is my own fault so I still give it 5 stars. I will definitely make these again and will try to improve my technique when making the topping.

Broiled Scallops

This turned out pretty good. I changed the recipe by using sea scallops cut in 1/2 (because that is all I had) and reduced fat butter. I tossed the cooked scallops in angel hair pasta with a little extra butter, parsley and parmesan cheese. I will make this again.

Tartar Sauce I

This was much better than bottled sauce. I used the lemon juice and I think that really helped with the flavor and texture. The next day I added sugar to the leftovers and made a delicious spread for our shaved ham sandwiches.

Buffalo Chicken Fingers

This turned out great! The only thing I did differently was to marinate the chicken - which I cut into nugget size pieces- in Texas Pete's Buffalo Hot Sauce for 1 hour prior to coating. The chicken was very spicy and had some heat. Putting the hot sauce on the inside also helped the chicken to remain crispy. I also provided additional hot sauce and fat free ranch for dipping. These were a bit hit at dinner!

Hawaiian Chicken I

This is definitely one of the best recipes that I have ever made. I followed the recipe exactly except I used pineapple chunks instead of rings and grilled the chicken and pineapple separately on my George Forman grill. I served it with steamed Jasmine rice. The only thing I will change next time is reducing the sauce recipe by 1/2 because I had a large amount leftover.

Hot Chicken Sandwiches II

This was an easy recipe that I made for a simple week night dinner. I did make a couple of minor changes to the original recipe. I baked 1 pound of fresh boneless chicken breasts instead of using a chicken in a can and used Campbell's Special Request 98% Fat Free Cream of Chicken Soup to help reduce the fat content. I also had to add tiny bit more water to get the stuffing to soften properly. It turned out great - I will definitely make it again.
