Broccoli Potato Soup

This soup is super easy and really good. I personally tend to go for the more made from scratch soups, but sometimes ya just gotta go for easy recipes. I give it 5 stars for easy cooking, 4 stars for flavor, and 3 stars for what I will call creativity. Average it out and this 4 star recipe is great for a quick easy fix with tons of veggies. I even added more than this recipe had. Sometimes simple is great and this recipe is just that. Keep a can of Cream of Potato in your pantry and voila you have a good soup in no time! NIcely done

French Onion Soup Gratinee

Sixth soup of the year and they keep getting better. I do not order French Onion soup, but made it for coworkers. Everyone loved it and said it was restaurant quality. I tried it myself and will be making this again and again. Amazing soup. Makes the whole kitchen smell amazing! No changes at all!

Super-Delicious Zuppa Toscana

3rd soup of 52 for the year. And they keep getting better. This one leaves some heat on the tongue, which I LOVE. As usual I altered the recipe a bit as usual, but the core is there and AMAZING. I added some asparagus, used Turkey Bacon, and didn't add any cream to make it a little healthier. I also skimmed some of the grease off the top because the sausage and bacon can be greasy. All together the best soup I have made ever. The heat is great, the heartiness is awesome and I am impressed. Might have to get another bowl as I write this.

Italian Sausage Soup

This was the first soup of my year of weekly soups. The soup was by far the best soup I have ever made. I added some extra veggies to help add some nutritional value. My TOP suggestion would be drain the sausage if cooked on a stove top. My soup was kind of greasy because I did not drain, however the flavor was too good, so I overlooked that small fact. I look to alter this recipe in the future with other veggies. Very good.

Mulligatawny Soup I

Trying a new soup each week for 2012 might be difficult, but with recipes like this I am really looking forward to try new soups! I changed this up a bit as the original taste did not have enough flavor to my liking. I did not add the chicken, I doubled the curry and the rice. After letting it set over night, it was even better the next day for lunch. I finely cut the apple to help eliminate the chunks and I also added extra veggies. This is one of the better soups I have ever tried. I also added some red pepper flakes like someone else suggested to add some heat. Not sure if soup 3 of 2012 can beat this one....
