About this Cook
I am in my late 20's and began 'serious' cooking together with my college roommate where we tried to find the most challenging recipes and become 'gourmet chefs.' We weren't always successful... but most importantly we had a great time, learned a LOT about cooking, and most definitely expanded our herb-selection :) My hubby is grateful for my previous exploits!
My favorite things to cook
hmm... probably casseroles. Throw everything together ahead of time then bake it as company arrives. Voila! Although I love making desserts, pastas/pizzas, and any new dish that turns out great :)
My favorite family cooking traditions
Every year at Christmas my grandmother used to bring her special "Peanut Butter Balls." They're a pain in the butt to roll and cover wth chocolate, but the end result is so delicious and definitely worth the effort.
My cooking triumphs
My first Thanksgiving-- Easy Herb Roasted Turkey, Ibby's Pumpkin Mushroom Stuffing, Fresh Herb Dinner Rolls, Grandma's Green Bean Casserole, Yummy Sweet Potato Casserole,and Mrs. Sigg's Fresh Pumpkin Pie. Everything was absolutely perfect! I was proud of myself and everyone enjoyed!
My cooking tragedies
My first attempt at making pierogies for my husband and brother/sister-in-law. I thought I had prepared everything in advanced but had added the wrong amounts of one of the ingredients to the dough and it was ruined! Their family knows me as the "cooking queen" so I was so embarassed by this mishap--lesson learned for the next time!

Perfect Ten Baked Cod
We made this for dinner tonight and it was good, but not great. The topping combination is really what made this dish, but when you add buttered ritz crackers to any dish it's almost guaranteed to be good. I thought the fish itself was bland and didn't absorb the butter or wine flavours, and all of the topping that fell off the fish into the wine turned soggy (naturally). Even though I wasn't a big fan, both my husband and toddler liked it, so compromising with 3 stars.

Chef John's Gazpacho
Delicious! I made this tonight and it tasted fresh, flavourful, and healthy. The only change I made was to cut the amount of oil in half to reduce the fat content, and I left out the pepper to make it child-friendly. Even my picky toddler finished a bowl (I pureed his so he couldn't pick out the veggies). My only comment would be that the serving size seems a little off to me (or maybe my tomatoes just weren't large enough) but the serving size for 6 was just barely enough for 2 adults and a toddler. Otherwise it was great, and will definitely make again!

Szechwan Shrimp
We just made this for dinner tonight. It's fast, easy, and low fat--just what I was looking for. I only made a few changes, I used fresh ginger, left out the red pepper flakes (to make this kid-friendly), and used half the amount of oil. I marinated the shrimp in the sauce for 30 minutes before adding the cornstarch, then while frying the shrimp added the cornstarch to the sauce. I fried up some shredded carrots, shallots, and red bell pepper with the shrimp and served with rice and roasted broccoli (I thought the crunchy texture of the roasted broccoli really complemented this!). My picky toddler took one bite and then refused to eat anymore (as normal) but then when he thought we weren't looking shoveled the rest into his mouth--he completely cleaned his plate. Delicious and easy!
