Ham and Hash Brown Quiche

This was great! I used shredded sweet potatoes instead of hash browns. I didn't have any peppers on hand so I put kale in instead. I also added some fresh garlic and I used a cheese blend instead of all cheddar. My son had three helpings and didn't realize it was made with sweet potatoes - he says he doesn't like sweet potatoes. I cannot wait to make this again.

Zucchini 'Noodles'

This was wonderful. I got a GEFU spiral cutter to make zucchini noodles. I've never cooked zucchini noodles before. I used ghee instead of margarine but did everything else according to the directions. It was much better than I expected it to be. It was delicious! I cannot wait to cook it again.

Homemade Ketchup

This was great. I didn't know making ketchup could be so easy. I substituted the 2/3 cup sugar with 1/2 cup agave. I decided I to make my own ketchup because the store bought ones all contain High Fructose Corn Syrup and I don't want that. Thank you Chef John.

Deliciously Healthy Paleo Pancakes With Banana and Walnuts

The flavor is good. These are like a cross between crepes and pancakes. They are more difficult to cook because they fall apart easily. They would be very good served like a crepe with fresh fruit on top. A very good paleo recipe.

Merritt's Butternut Squash Gratin

I made a lot of substitutions and it still came out great. I love this recipe. I used coconut oil instead of butter, almond meal instead of bread crumbs, amber agave syrup instead of brown sugar, mozzarella cheese instead of Gruyere cheese, my seasonings were all from a bottle, and I used a different kind of squash. I was very worried about how it would taste - it was delicious. YUM!! :)

Gnocchi Bake

Yummy! I did like a previous reviewer and used half gnocchi and half tortellini. I didn't add any meat. I added some sliced black olives and I cut up some artichoke hearts and added to the sauce. It was very easy - I used canned spaghetti sauce. I served with garlic bread. Everyone loved it.

Spinach Manicotti

This was very good. I added artichokes to it. I filled the shells from a corner cut off of a ziplock back like another reviewer suggested. It works much better if the mixture is room temperature. It is harder to fill the shells when the mixture is cold.

Slow Cooker Cilantro Lime Chicken

I made this tonight....yummy! I knew it was going to be good because of all of the reviews but it turned out better than I expected. The cilantro I used came out of a bottle, the taco seasoning was old, the lime juice came from a bottle and I used a mild chunky salsa. WOW was it good....I can not imagine what it would taste like with fresh ingredients. My 12 year old son loved it too. I used it wrapped up in a burrito with cheese and sour cream at first. Then I tried it with chips, cheese and sour cream - that was salty. It does not taste salty unless you are eating it with chips. I had the cheesy baked doritos. The mixture was salty...but still good. I really wish I had some avacodos on hand. :-) I cut up the chicken because I prefer to cook it that way and I turned it to low after about an hour. I think I had my burrito after about 3 hours of cook time.

Zucchini Patties

My whole family loved this. I am going to add spinach to it next time. I used the cheeses I had on hand...pepper jack, swiss and cheddar. I topped the patties with salsa and sour cream.
