Beef Taco Skillet

This recipe was ok only. I made it as written, but it would need some changes to make it more to my liking. Taco seasoning would help add some zip. My flour tortillas stuck together and gummed up a bit, so I wouldn't add them into the skillet next time. I was thinking that corn tortillas would possibly work better. That being said, my family did eat every bite. I think I may try it again with some changes.

Beer Lime Grilled Chicken

This made a very moist grilled chicken, I only marinated it 30 minutes like the recipe called for and you could taste the beer.

Taco Stuffed Shells

This recipe was very good. I omitted the green onion and sour cream. I added grated cheddar cheese to the top on the last ten minutes of baking. Also, I may have lost my mind, but I couldn't find an oven temp anywhere on this recipe so I just went with 350.

Groovie Smoothie

My family liked this recipe, but it seemed like it made closer to four servings instead of two. Three of us couldn't drink it all. I am not a yogurt fan, but I liked this. I think some sugar would take away the tartness of the strawberries a bit, as other reviewers suggested. I am anxious to try with blueberries.

Easy Pot Roast

I didn't have great luck with this recipe. The meat was tough and wasn't nearly done in 1 1/2 hrs. I also felt there was too much water added, which watered down the seasonings. I'm not so sure though if it was the recipe that lacked or the COOK! It wasn't a total wash, my family ate it and didn't complain.

Tangy Southwest Coleslaw

Eggplant with Tomato Sauce

This wasn't bad at all. I put the tomato sauce and cheese on top and put it all back under the broiler to melt the cheese. I think next time I will peel the eggplant. Maybe its' just me, but the peel is so tough. I will make this again.

Beer Cake I

The beer and cake was a bad mix. I couldn't get past the smell and the taste of beer was very strong. It was kind of dry as well. I will not make again.

Bruschetta Chicken Bake

This was very well received at my house. I followed the recipe exactly, and it was excellent. I wouldn't change anything, but I was thinking that another way you could take this is to use Mexican spices, cumin and adobo...use Rotel...then use cornbread dressing and cheddar cheese instead of mozzarella. Just a thought.....

Mexican Potato Stew

I liked the ease of this recipe. The ingredients are so easy and something I always have in the pantry. It was very filling and made alot. Some cheese on top would be good, but it was good without as well.

Soy Milk Smoothie

I also used low fat soy milk and substituted the Equal with Splenda. I agree with the last reviewer about adding a whole banana for two servings. This is a very good recipe!

Mexican Soup

My family really enjoyed this recipe. I served this with corn muffins and it was a very hearty meal. This is a great weeknight recipe as it is very easy to throw together and the ingredients are items usually found in your pantry. I will definitely make this soup again.

Creamy Fruit Salad I

I didn't care for the canned fruit in this recipe. There was also too many cherries. This may be just a personal preference. I would make recipe again, substituting fresh fruit for the canned.

I found that the rice mixture was alot, enough for 6 servings. It also needed kick, cumin or chili powder needed, as other reviewers have said. It's not a bad recipe though....

Stuffed Mushrooms Casino

These were wonderful! I normally try not to make changes to a recipe until I try it once, but I made several changes out of necessity on this one and they turned out well. I didn't have green onion, so I used yellow onion (grated- 1/4c.). I also cut the butter that you drizzle before baking to 1/4 c. instead of 1/2 c. These are very rich, but extremely tasty. This was my first try at stuffed mushrooms and they were easier than expected. I will definitely make this recipe again.
