Oatmeal Peanut Butter Bars

Reviewed: Jul. 5, 2003
This is a great recipe! I used all natural crunchy peanut butter and honey instead of corn syrup... it was perfect. I also skipped the sunflower seeds and used 3/4 cup of chocolate chips. Everyone raved!

Cinnamon Raisin Bread I

Reviewed: May 31, 2010
I have made this several times now and it is by far the most successful bread recipe I have tried. I have actually started using it as a basic recipe and just leave out the cinnamon/sugar/raisin combo. I also use 1/2 whole wheat pastry flour. I get so many compliments - it's delicious!

Slow Cooker Pulled Pork

Reviewed: Mar. 25, 2008
Delicious! I used a 4lb pork loin, which cooked for about 5 hours before I pulled it apart. The hardest thing about this recipe is getting it out of the crock pot - it's so tender, it falls to pieces!

Corn Dog Muffins

Reviewed: Mar. 29, 2008
These were a huge hit at our son's birthday party! Like others, I sliced the hot dogs up and added them right to the batter. Used about 1/4 cup per muffin, and greased the tins well. Also, removed immediately after baking to prevent sticking. I was skeptical about the brown sugar, since I used Jiffy mix, so I cut it in half. Everyone kept complimenting me on them - thanks for a great idea!

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Jun. 16, 2007
I used a total of 3/4C butter (no shortening). I also added allspice and chopped walnuts and doubled the cinnamon. I think next time I may reduce the sugar a bit. We couldn't stop eating them!!

Raspberry Trifle

Reviewed: Jun. 12, 2007
This was great, and I have had many requests for the recipe. I used sugar cookies instead of pound cake (because I had some dough already made) and frozen blackberries because they were cheaper! :) Also omitted the cocoa - it was sooooo good! Thanks!

Chewy Peanut Butter Brownies

Reviewed: Apr. 22, 2008
These were fantastic! As per other reviews, I used one egg and just a bit less flour. Mine weren't too sweet, as other had said, but I think that depends on what kind of peanut butter you use. We use low-sugar, so I used the amount of sugar called for. I also added chocolate chips, cause I can't live without 'em. Mine were a cross between a cookie and brownie - perfection!

Black Bean and Couscous Salad

Reviewed: Jun. 23, 2007
Everyone LOVED it! I subbed tomatoes and cucumber for the beans and corn, and I added feta. That dressing is perfect!

Oven Roasted Red Potatoes and Asparagus

Reviewed: May 8, 2008
I left out the herbs because I am not a big fan of rosemary and I am out of thyme... Just added lemon juice and butter (in place of oil) and it was absolutely delicious!

One Bowl Chocolate Cake III

Reviewed: Jun. 26, 2008
Update! I have made this about a million times and it is always so good and so moist and absolutely perfect. Tonight I made cupcakes from this recipe and they are AWESOME! 1/4C batter per cupcake - I will never use another recipe. Thank you!! /SO good! I can't believe how easy this was - and so so good! Too make it even easier and even better, when I pulled it out of the oven I sprinkled a bag of chocolate chips over the top and then smoothed them once they had melted. Then I sprinkled chopped pecans on top. Way easier than making frosting, and a big hit at our work potluck. Thanks!

Deep Dish Brownies

PERFECT for a chocolate fix! Very decadent. As others suggested I used only two eggs and omitted the baking powder. Baked in muffin tins for about 18 minutes - so so so yummy!

These were great! I subbed 1/3 cup oil for the butter, like others said, and got 12 super moist muffins! Also sprinkled the top with chopped walnuts. Thanks for a great recipe!

So delicious! I used 2T less butter than called for... had no problems cutting them or removing them from the pan. I chopped up walnuts and sprinkled on top - perfect!

French Bread Rolls to Die For

Reviewed: Jul. 21, 2008
I finally made these today and am so glad I did! I used all-purpose flour and quick rising yeast, which worked out well. I only made them with 3 cups of flour and then sprinkled more on the dough as I was kneading it (probably about 1/2 cup more). I baked them for 12 minutes. They were delicious and SO easy! These are going to be a staple for us.

Texas New Potato Salad with Grilled Red Onions

Reviewed: Jun. 9, 2008
This was a great alternative to creamy potato salad. Due to what I had on hand, I used ground cumin and coriander, and used parsley instead of cilantro. It was delicious - got lots of compliments!

Cannellini Bean with Flat Leaf Kale

Reviewed: Feb. 19, 2008
This was great! I used low-sodium chicken broth (more than called for so it was more of a soup), extra kale, about 4oz turkey kielbasa, and half a can of diced tomatoes. I'll make this again for sure - so easy!

Oatsies

Reviewed: Jul. 9, 2007
Very good. I made mine in greased muffin tins (made 16), and they came out beautifully. I overdid it on the chocolate chips - a little goes a long way - the oats are so good, you don't want to overpower them. In fact, I think you should be able to see the oats through the chocolate. Also, just sprinkle them on when the first come out of the oven and spread (rather than melting them seperately) - it is so much easier!
