Oatmeal Peanut Butter Bars

This is a great recipe! I used all natural crunchy peanut butter and honey instead of corn syrup... it was perfect. I also skipped the sunflower seeds and used 3/4 cup of chocolate chips. Everyone raved!

Chicken Tikka Masala

This is SO good - the chicken is super flavorful. I actually let mine marinate for a few hours and then just grilled it on the foreman - delicious! Used half/half instead of heavy cream and nonfat yogurt from trader joes and crushed red pepper instead of cayenne... perfect - will definitely make it again.

Curry-Coconut Shrimp

This was very bland. I left out the cornstarch and used a 13.5oz. can of light coconut milk. Definitely needs salt or something - don't think I'll make this again.

Simple Country Ribs

everyone LOVED this recipe. I added cilantro and garlic to the sauce to give it a little something special and omitted the salt and pepper. Will definitely continue to make this for guests!

Special Honey BBQ Sauce

Chicken and Corn Chili

WOW! This was fantastic and went FAST. I made some alterations, based on other reviews: add one can diced tomatoes, used fresh salsa, frozen corn, used black beans instead of pinto, and added a can of red kidney beans. Will make again and again, I'm sure! Especially good with sour cream, cheddar and cornbread!

Simple Mac and Cheese

Terrific starter recipe. I added sauteed onions and frozen peas. Also, I used 2 cups cheddar and baked mixture with breadcrumbs on top. Made it twice in one week - went fast at a potluck!

Cream of Coconut Cake

People couldn't stop talking about this cake! It's so moist (especially if you pour remaining coconut milk over warm cake)... I used only 3 cups sugar for frosting, and coconut milk instead of regular. Also, added coconut extract to cake and frosting. SO good!
