Cannellini Bean with Flat Leaf Kale

This was great! I used low-sodium chicken broth (more than called for so it was more of a soup), extra kale, about 4oz turkey kielbasa, and half a can of diced tomatoes. I'll make this again for sure - so easy!

Addictive Sweet Potato Burritos

These were really good. I used black beans. I think next time I will mix the beans and sweet potatoes together to get a more blended flavor, and I will definitely add more cheese. Great vegetarian option. Thanks!

Asparagus Quiche

I had everything on hand except the bacon and cream, so I improvised and it was fantastic! I used 1 cup of 2% milk, and sauteed some low-fat turkey kielbasa with green onion. I threw it all into one 9-inch pie crust. By default, it was lower in fat and calories, and I will definitely be making it again, just the same. The flavor was perfect.

Bean Quesadillas

I love quesadillas and I didn't like these much. If I were to do it again, I would use roasted peppers and omit the corn. The super-chunky/crunchy texture was a little too much for my taste. They could use some spice as well, so I added cumin.

Best Big, Fat, Chewy Chocolate Chip Cookie

1. No need to refrigerate dough IF you bring eggs to room temp, and let melted butter cool a bit. 2. Don't need to sift, just stir dry ingredients. 3. No need to grease cookie sheets. 4. Slightly flatten dough once you drop it onto the cookie sheet. 5. Watch out because these are too good to stop eating.

Roasted Red Pepper and Potato Soup

This was very good... I made it for a crowd and didn't feel like dicing everything, so I roughly chopped everything, cooked as directed and pureed it in the end. That gave it a nice chowder-like consistency. And I will say, the flavor is wonderful the next day!

I think this may have been better had the cheese been mixed in before baking to give the flavor a little more depth. I think it's better suited for pasta or chicken - but it was good!

Cranberry Cream Pie II

Instead of one crust, I put my filling into the individual graham cracker pie crusts... I also added a little brown sugar to my cranberry mixture. This was absolutely delicious and got lots of compliments at our Christmas celebration!

Salted Nut Bars

Carrot Cake III

WOW! Never made carrot cake from scratch, but will never go back! This was the best carrot cake I have ever tasted. Added a couple handfuls of raisins. Thank you for a fantastic recipe! (followed suggestions of other reviewers re: applesauce, pineapple and brown sugar.)

Stuffed Zucchini

This dish is excellent. I browned italian sausage with some mushrooms and onions and used regular store-size zucchini - no need to prebake! These are a definite keeper.

Chicken Enchiladas IV

These were good - great the next day. I feel like the corn tortillas overwhelmed the filling (which was SO good!). Next time I think I'll use flour. Also, a great sauce: fresh salsa, chicken broth and sour cream.

I got so many compliments on and requests for this recipe! I used half the amount of butter called for, low sodium broth, added some sauteed mushrooms and used half brown rice. Also, when it was time to remove the foil, I stirred everything again. It was delicious - thanks!

Banana Upside-Down Cake

This was so so so good. And I don't even like bananas! I used a skillet - be careful when flipping it! :) I had to re-mold it, but you couldn't tell. Also, I used Trader Joe's Vanilla cake mix - divine! Thanks for an AWESOME recipe!
