Turkey and Quinoa Meatloaf

I liked this, but the rest of my family didn't really. It was a bit on the dry side. I think by throwing in some pureed vegetables you can add even more nutrients and some moisture.

Cinnamon Raisin Bread I

I have made this several times now and it is by far the most successful bread recipe I have tried. I have actually started using it as a basic recipe and just leave out the cinnamon/sugar/raisin combo. I also use 1/2 whole wheat pastry flour. I get so many compliments - it's delicious!

Coconut Cake IV

I loved this cake! I was happy to find a coconut cake that didn't require a mix! I cut the sugar by 1/3 cup. I made it in two 9" rounds and it made a beautiful layer cake. A couple of things to keep in mind - this cake is dense - but so delicious. Another thing, you really do need to grease your pan(s) well. One of my layers came apart, so I did some restructuring. The pan that I greased really well came out perfectly. I got so many compliments on this cake - thanks for a great recipe!

Quick and Almost-Professional Buttercream Icing

This was so easy! I really wanted a recipe that didn't call for shortening, and this was perfect. It spread beautifully. My only complaint is that I should have made it a bit stiffer for the piping - next time I will set some aside before I add the milk. I doubled the recipe for my layer cake and used coconut milk and coconut extract and used it for "Coconut Cake IV". Everyone loved it - thanks for such a quick and easy recipe!

Bagels I

These were great! I used 1/2 whole wheat flour and made mine "everything" bagels with sesame and poppy seeds, a little kosher salt, some onion and garlic. Some reviews said they were too salty, so I reduced the salt, but next time I will use the amount called for. I didn't use a bread machine, and I thought they came together pretty easily.

Crustless Cranberry Pie

I didn't change a thing and I absolutely love this! It tastes like Christmas - the almond extract is the perfect touch. And it could not be easier. I highly recommend it!

Turkey Rice Casserole

This was very good. I used chicken instead of turkey, and I think it'd even be good with chicken sausage. I doubled the broccoli and carrots, and would even add a bit more next time. I love that this doesn't require any canned soups. The sauce is delicious!

Sweet and Spicy Pumpkin Seeds

These are addicting. I added extra hot sauce for some more kick, and they are still pretty mild. Next time I think I will increase the sugar just a bit, as they aren't very sweet. I was hesitant about the worchestshire, but it added a nice depth of flavor. Good recipe!

Chicken Stew with Dumplings

This was excellent! The only change I made was using chicken breasts. I did mine in the slow cooker: Cooked frozen chicken with diced onion and chicken broth for 3-4 hours on high. Shredded chicken and returned to the pot with vegetables and spices for about an hour. Then dropped in dumplings and replaced lid for about 45 minutes. All ready to go and absolutely delicious! Thanks for a great recipe.

Zesty Slow Cooker Chicken Barbecue

I LOVED THIS! It was so easy, I think we'll be eating this often. I cooked the chicken in chicken broth with sliced onions for about 4 hours, drained it, shredded it and added the sauce and dressing and let it cook for 2 more hours. Thanks for such an easy, delicious recipe!

Easy Red Beans and Rice

I liked this. It might not be "authentic" (I have no idea), but it sure was tasty! I only used one can of beans, 1/2 an onion and I used chicken sausage, because that is what I had. I added some extra garlic, too. I combined it with the rice before serving - it was a really filling, satisfying meal. Served it with Jalapeno Corn Bread.

Jalapeno Corn Bread

This was really good. I used a small can of jalapenos and made it into muffins. These babies were hot! I used 1 C cornmeal and 1 C flour, because that is what I had on hand, and they were the perfect texture. **Helpful hint: if you don't have buttermilk, put 1 tablespoon of lemon juice into your measuring cup before filling with milk and wait 5 minutes. It's an easy substitute!

Portobello Sandwiches

Best summed up by my husband, "This is a mushroom?!?" These were delicious and we will have these again and again, I'm sure. Used fresh thyme and poured almost the entire marinade into the caps so all the flavor could be absorbed. Cooked them on the grill and added provolone and sauteed red onions. They were fantastic! And the clincher: it all came together, including a salad, in less than 30 minutes.

French Bread Rolls to Die For

I finally made these today and am so glad I did! I used all-purpose flour and quick rising yeast, which worked out well. I only made them with 3 cups of flour and then sprinkled more on the dough as I was kneading it (probably about 1/2 cup more). I baked them for 12 minutes. They were delicious and SO easy! These are going to be a staple for us.

Greek Chicken Pasta

This was very good. I used two tomatoes, and I think I would double that next time, along with more red onion. I used whole wheat pasta and fat free feta, and it was delicious! This is definitely a keeper.
