Southern Pimento Cheese

After 10 years of requesting pimento cheese from my mom and mother-in-law, I finally broke down and looked for a recipe to make on my own. I never thought I'd say it, but this recipe puts their old Southern recipe to shame! It was absolutely delicious with just the right amount of kick. I followed the recipe exactly but with half the ingredients since my husband claims he doesn't like pimento cheese. Well, I got 3 crackers full of this and he ate the rest and asked for more. I served with Ritz crackers for a Saturday afternoon snack and I will be making this again - soon! Thanks for sharing.

Dijon Crusted Halibut

Unfortunately, this one just didn't live up to the great reviews for us. I didn't think the flavors complimented each other very well. Thank you for taking the time to post the recipe though.

Speedy Homemade Salsa

I made this salsa two days in a row it was so delicious and so, so easy! The first time I made it a followed the recipe exactly and the second time I used fire roasted tomatoes (diced) and added the juice of one lime. Both ways were fantastic and I can't really say I liked one better than the other, but without the lime it has a slightly stronger taste. I will be making this again and again. Thanks for a great recipe!

Slow Cooker Chicken Taco Soup

This was a wonderfully flavorful soup! Even my hubby who usually isn't much of a taco soup lover (because of the "tomato-y" taste) raved about it. It was a little bit spicy for my 3 year old, but I loved the little kick that it had! I used a Shiner Bock beer and it gave it a really amazing taste. Even if you're not a beer drinker, please make this at least once with the beer since it really gives this a unique taste. This is the sixth "taco soup" recipe I have tried this winter and this recipe is the only one I will make again. I did add about 1/4 cup of cilantro to the mix about 10 minutes before I served it. If you are a vegetarian, you could leave out the chicken and it would still be delicious. I topped it only with crushed blue tortilla chips. Paired with a good asiago cheese bread and dinner was easy breezy! Thanks for the great recipe.

Mexican Bean Salad

This was absolutely amazing! I made it the night before and served for lunch and was a little leary when I took it out of the fridge because I thought it looked a little soggy, BUT one bite removed all of my reservations. I don't know what else to say except that this is perfect!

Roasted Okra

I have never eaten okra that wasn't fried or mixed in a gumbo, so I was very skeptical about a recipe that was so easy with such great reviews. I was thrilled with the taste of this okra! It was just as delicious as fried okra and is a calorie savings of about 140 calories per serving. I followed other reviewers and shook the okra, oil, salt, and pepper in a large bowl and put it on a baking sheet covered with foil (didn't spray the foil first). I baked them for about 20 minutes. I started with the amount of okra the recipe called for and could tell it was not enough for 2 adults and a serious okra loving 3 year old. I doubled the amount of okra and pepper, but kept the oil and salt to the recipe's specifications and it was SUPER! If you are a skeptical fried okra lover, take a chance and give this recipe a try - I know I'm glad I did. Thanks for posting such a great and simple side dish.
