Yummy Baked Chicken Thighs in Tangy Sauce

Husband loved this and the kids were happy too. Didn't have steak sauce, added a little extra sugar (and used brown sugar) to make sure the kids would be happy since they are suspicious of anything new. I will reduce or skip the butter next time but otherwise it was perfect. What I liked most was that it was forgiving in terms of ingredients and time (sat in the oven extra long) but also cooking at 300 degrees made it SO tender.

Butter Chickpea Curry

My husband thought this was ok with sriracha but the 4 kids and I were not fans even though we all normally love these spices. Felt like some flavor was missing although I couldn't really put my finger on what that could be.

Colonial Brown Bread

Loved the flexibility and speed of this bread. Needed a dinnertime bread and had forgotten to bake a proper loaf earlier in the day so this was an ideal substitute. Made 1 loaf per recipe - perfect for our chicken dinner (with butter). Made 2nd loaf with flax seed, vanilla, cinnamon and raisins to use for breakfast/healthy kids snack. Both turned out great. Easy to figure out sweet add-ins for breakfast type bread - hoping to find more savory add-ins for dinner bread even though it was good as described with butter.

Eggplant Lasagna

I loved this but unfortunately the picky husband and kids did not. I think they were biased against the idea of eggplant more so than the taste though. Only changes were to use ground turkey rather than beef and panko instead of regular bread crumbs (since I was out). I was particularly impressed with the texture of the eggplant after baking - not too soft or too firm - just perfect.

Chicken and Bok Choy Soup

Surprisingly good soup! Needed a way to use some bok choy so gave this a try with low expectations. My husband asked for seconds but added sriracha sauce, and I liked it made pretty much as described. Used homemade broth, and didn't have white potatoes so I used 1 sweet potato and some rice. The kids (7 & under) ate their whole bowls without too many complaints (which is a compliment from my picky eaters).

Easy Pesto

The entire family loves this recipe! Tastes great with any nut (we use pine nuts, walnuts or pecans), and freezes wonderfully! I make a ton before the first frost and freeze it all in ice cube trays - love having this ready at any time. Careful on the timing when roasting the nuts - easy to burn them.

Marinated Teriyaki Chicken

This was pretty good. Husband loved it, 4 yr old picky eater and I liked it, 7 yr old and another 4 yr old didn't like it (but ate it). I think the kids just prefer a sweet brown sauce which this is not at all. I followed the recipe but decided to use a little cornstarch at the end for a thicker sauce, and added broccoli to the onion & pepper. Next time I'll add a little more teriyaki sauce and a little less wine.

We make this recipe at least twice a month - it's my favorite and the kids love it too! I always follow the recipe and it's perfect as it is We enjoy it warm with butter and rarely have any leftover, but when we do, it's great for sandwiches.

Mulligatawny Soup I

My husband and I love this soup! We do it without cream for the adults (but use 1/2 & 1/2 for the kids to help their bowls cool down), use brown rice, and I use half curry/half garam masala. Husband adds spicy curry powder and thai chili paste to his bowl to spice it up more. I love that it is adaptable so you can easily use different amounts or different vegetables (I've tried it with parsnips as well as red pepper - both work great). Great blended or left as it is. I always at least triple the recipe in order to have enough leftovers!

Sweet Potato, Carrot, Apple, and Red Lentil Soup

Absolute favorite soup! Kids like it it, and my husband and I both love this. I stick to the recipe usually except I add a heaping 1/2 tsp of garam masala and use homemade chicken stock instead of veggie broth. My husband likes it spicy, so he adds a generous helping of cayenne pepper (and/or curry paste) to add some extra heat to his. This is a delicious and flexible recipe - a little more or less of something still works fine, as do regular brown lentils and ground ginger. Have some extra red pepper - throw it in etc.

Pasta Con Sarde (Pasta with Sardines)

Love how quick, simple, and delicious this is! I only use 1/4 c bread crumbs to make it a bit healthier. All 4 kids eat this (2 year old LOVES it) and it's just such a simple way to get some DHA inexpensively. Husband doesn't like the thought of sardines, but is happy to eat this with red pepper flakes and sriracha. (We have used a variety of sardines and found it good whether they are in oil/water/hot sauce.)

Addictive Sweet Potato Burritos

I was a little nervous about the odd ingredients as I was putting it together, but was amazed by just how good these were! Only change was using half kidney beans and half black beans. Delicious! Husband and 7 yr old loved it too. Looking forward to using the frozen leftovers when we're in a hurry some night.

Cheesy Apple and Oat Meatloaf

Love this recipe. Made it exactly following recipe (other than doubling the recipe and shaping into 3 loafs in a large pan in order to freeze and save two) and I enjoyed it but hubby thought it had a little too much filler (bread crumbs). Now I modify it just a bit: ground turkey, a scant quarter cup of wheat germ to replace the 1/2 cup of bread crumbs, a little extra apple, and it's perfect for our whole family!

Chicken Breasts with Balsamic Vinegar and Garlic

Following other reviews, I skipped the flour but added some cornstarch to the final sauce to thicken it slightly. I followed the other instructions completely. This tasted pretty good to me but my husband and kids just thought it was ok. We all agreed it seemed to be missing some depth that I couldn't quite place. Perhaps some red wine as others suggested? It was definitely tender chicken and seems to have good potential, but I'll have to play around with it for next time.
