Mexican Casserole

VERY good...sauteed onions and fresh garlic until tender and then added the refried beans to heat through and make it easy to spread. Made this with Spanish Rice II from this site for a nice, vegetarian meal (although we aren't vegetarians).

Spanish Rice II

Very nice recipe for homemade spanish rice. Didn't have the green pepper and didn't miss it. DEFINITELY use chicken broth instead of water.

Oatmeal Peanut Butter and Chocolate Chip Cookies

Well, I liked the texture of these (not sure why anyone had problems with them being dry) but could not taste the peanut butter at all. I am so glad I added 2 C of chocolate chips instead of 1 C or these would have tasted like nothing.

Eclair Cake

BIG FAT YUM! I made this today to take to friends' house tomorrow because I heard that it is even better the next day. I don't know, but it sure was INCREDIBLE today! Just a couple tips others have suggested. I used my kitchen aid mixer with the whisk attached to mix the cool whip, milk and pudding. I let it set in the fridge for just a couple minutes. Also, it does help to microwave the frosting at 15-20 second intervals, stirring after each interval. THIS WILL BE GOOD FOR BREAKFAST, TOO! HA!

Mrs. Fields Cookie Recipe I

YUM YUM YUM!!!! Everyone is right, DO NOT overbake! I thought about what this meant, and I concluded it means it's alright to underbake. You may think they are not done but do not despair, an underbaked cookie is scrumptious!

Chocolate Chip Meringue

YUM! I got a little nervous and took a batch out a little too early. Make sure they are lightly browned on the top, too and then you'll know they're done perfectly. And yes, just use half the chocolate chips and a scant cup of sugar.

YES, these were EXCELLENT! I skipped the peanut butter cups, too. The peanut butter flavor wasn't overpowering but was just right. They ARE crispy on the outside and then melt in your mouth! YUM!

Mmm-Mmm Better Brownies

Went with the suggestion to melt the butter instead of using the oil and added 1/2 cup milk chocolate chips. YUM! Chewy, rich brownie! Have also made with vegetable oil and are just as good! Cheaper than using butter, too! So easy! Forget the boxed brownies!

Mild Cheesy Chicken Enchiladas

YUMMY! Definitely saute the onions first. I added a layer of refried beans to each tortilla. To make the sauce (it just says melt), I put the sour cream and remaining shredded cheese in a saucepan and added a can of diced tomatoes with green chiles and warmed it all through to melt it. Very filling but very tasty!

Somewhere Over the Rainbow

HUGE hit for a baby shower I had on Sunday! FYI, there are 4 pints to a half gallon so for each half gallon of sherbet, you need 4 two liters of soda. I used raspberry sherbet since this baby is going to be a girl and it was a gorgeous pink and frothed up beautifully! Wouldn't mind drinking it every day!

Dump Bars

Well, I thought these weren't bad but hubby thought they were dry and wouldn't take them to work. He might have just taken out an end piece, though. Really, they aren't bad and they are pretty easy. I needed to use up eggs and this was a good way to do it, seeing as though the recipe calls for FIVE! :)

Deep Dark Chocolate Cake

This is a great, moist chocolate cake recipe! And the frosting is terrific!! The possibilities are endless for different kinds of frosting...homemade peanut butter, raspberry, vanilla, caramel...this is a great versatile cake and it's beautiful if made into a layer cake!

White Velvet Cake II

WHOA, this cake was moist and VERY rich! It didn't come out at all the way I expected but no problem, it was TASTY! It isn't white, looks more like a yellow cake and not at all like the cake mix cakes. Maybe because of using baking soda instead of baking powder? Anyway, I frosted with Hershey's Perfectly Chocolate cocoa frosting. VERY tasty! Not sure why but it needed an additional ten minutes to bake...no problem, though.

Foil Wrapped Veggies

Made this for July 4th and everyone enjoyed it so much! MAKE SURE you really use a lot of oil so it doesn't stick. It's not low fat but will be much easier!
