Lemon-Thyme Cornish Hens

First time making cornish hens. I chose this recipe cuz it was nice & simple and I could serve mashed potatoes & corn on the side instead of worrying about stuffing the hens. I had to double the ingredients because I had 4. I used fresh thyme instead of dried, but kept everything else the same including timing & temp. Came out tasty, juicy, the meat falls off the bone. My guests and I were very pleased.

Pumpkin Dip

Instead of pie spice I used a tsp each of nutmeg, allspice & cloves. Everyone loved it with apples & graham crackers.

Arjun's Lime Chicken Rice

Very flavorful but you should really like cilantro because it dominates. Was confused by qty of chicken so I used 3 breasts and amount of marinade was good; short on time so only marinaded for a couple hours. Made brown rice seperately & combined everything at the end, no chicken stock or bay leaf needed. Used 1 jalapeno & left the seeds in so came out plenty spicy. Juice from one lime wasn't enough, next time I'd use 2. Great recipe to give boring old chicken a boost!

Beef and Mushroom Stuffed Peppers

Excellent switch up to green peppers with tomato sauce. Had enough filling for 4 medium size red peppers. Added garlic & cayenne to meat based on suggestions. Used McCormick beef gravy mix packet, had 1 cup leftover so next time I'll cut that back. Didn't boil peppers since I like them crisp, only baked for about 15min. Used italian blend cheese since that's all I had. Served brown rice on side. So yum! Will definitely make again!

Chicken Vicious

This worked out well with frozen stir fry veggies & cut in half for 2 chicken breasts. Added the frozen veggies in the last 5min. Maybe would have cut the cook time on the chicken in the beginning because it came out a little tough. Great sauce, expected it to be really spicy but the sweet was a nice offset.

Asian Mushroom Soup

Subbed thai rice noodles and there wasn't enough broth so ended up diluting flavors adding boiled water to it just to cook the noodles. Maybe better sticking with udon noodles.

Jambalaya Casserole

I've tried several jambalayas (both homemade & package) and this is my new favorite! Here's how I modified for 8 servings: while veggies were cooking I boiled up 4 chicken boullions with 4 cups of water in a 3qt dutch oven, while also cooking a chicken breast then shredding it. After boullion disolved I added all the ingredients to the dutch oven and cooked stovetop for about 25min over low heat. I like medium spicy so added a few extra splashes of hot sauce, 1tsp of cayenne, 1tsp Cajun seasoning. Swap 2tsp dried parsley for fresh. Didn't have browning sauce but next time I might try just to see how it changes it. Definitely needed every bit of water for the rice. Great recipe Evelyn!

Navy Bean Soup I

This wouldn't fit in my 4 quart crockpot so I went with low flame on the stovetop. Read several reviews here so made some mods but also tried staying true to the original. Soaked beans 1hr prior, rinse. Sprinkled a little brown sugar just in case tomatoes effected beans. Added all ingredients at once except turkey ham (my only sub) went in the last 1-1/2 hrs. Also at that point added 1 small bag baby carrots chopped & 8 petite red potatoes chunked. After 2hrs all my water was absorbed & beans still firm so I don't know how people didn't add the remaining water, maybe it's different in a crockpot? About 30min before finish I put 4 big spoonfuls in the food processor then dumped that back in the pot to make it creamy instead of watery. End result was great flavor & thickness, will definitely make again! ps- left out the salt & didn't miss it!

I'm not sure if the crust was supposed to be crumbly or if I did something wrong. I pressed firmly into pan and cooked for 19min (it was browned) & cooled for 2hrs. The taste was great but I was bummed the base fell apart.

Vietnamese Stir-Fry

I knew I took a risk subbing chicken because the marinade seemed more suited for beef. Even though I used only 1lb thin cut chicken, I didn't change the rest of the portions. Fresh beans cooked for a minute in the micro, left out the cilantro and added an extra dash of red pepper. Served with lime flavored basmati rice. I hoped the basil & mint flavors would come thru in the final dish like it does in Pho, but maybe it's different when cooked this way vs. soup. Overall mine was a healthy dish packed with a lot of ingredients but not much excitement, so I may try again with beef.

Light Holiday Tea Cakes

Used sugar instead of splenda, all-purpose flour only, didn't have pumpkin pie spice so subbed with cloves & nutmeg, and left out the pineapple. These were a hit & very moist!

Pineapple Macadamia Nut Cake

Moist & delicious. When I started I didn't realize my pudding pkg was only half the amount needed but it didn't seem to matter. I cut back on the glaze because I was worried it would be to "rummy" for me & also wanted to reduce calories. Changed butter for shortening. Next time I would add more pineapple.

Granola Bars III

Delicious! My healthnut friend told me to trade crushed bran flakes for flour and applesauce for oil. Also added 1 tsp nutmeg and you can pretty much use any nuts & dried fruits so I did cherries & pecans. This is a guilt free snack :)

Super Easy Chicken Chili

This was a great base to work from for using a leftover roasted chicken. Used cannellini beans instead of northern, diced tomato w. jalapeno instead of green chilies, no cumin, 1 tsp oregano & 1 tsp minced garlic (based on reviews & similar recipes). I cut the recipe in half & still cut back to 1-1/2 tsp cayenne and 1-1/2 tsp chili powder, left out sour cream, so the end result was the perfect amount of heat for someone who likes medium spicy. I'm not familiar with the level of heat from green chilies but I can see how just the original spice content would have made this extremely hot so....Beware! This was a nice healthy quick meal so I will definitely keep for future, thanks!
