Garlic Chicken
Definately cover the chicken for most of the baking time. I also minced the garlic and browned it, used a little extra Parm and Italian flavored breadcrumbs. Also I coated the chicken in egg, then flour, then oil and then the breadcrumbs. It helps everything stick together a little bit better. It was very good!
