Egg in a Hole

Come home late at night, peckish.......this is a nice, quick and easy snack. The bacon fat makes it extra delicious. A bit of pepper and salt. The deed is done.

Apricot Brown Sugar Ham

I have recipe that came from a restaurant in Ontario.It had apple juice,mustard,lemon juice and maple syrup or brown sugar. On looking at the recipe now, I see that it had crushed pineapple. I haven't made this dish for some forty years, but I don't remember that. BUT I do know the ham was absolutely delicious. It is much on the same lines as the recipe given.

Spicy Grilled Chicken

I found this delicious, quick and easy to get together. I didn't find the lemon too much. It all just blended together nicely. I left it to marinate for about 3/4 hours. I intended to leave it longer, but ate it for lunch instead of dinner.

Blackened Chicken

Absolutely delicious. The spice rub would do for any meat. Today I had a quail to cook and I roasted it with this rub. I was right - fantastic. I used the exact measures, so my bird was well covered. The spiced oil left in the roasting pan will do nicely to cook other meat.

Lemon Ginger Shrimp

For me, it wasn't supposed to have a predominant taste of ginger or lemon. Everything is supposed to go together to make a delicious harmony. I thought the marinade very good and the end result superb. I intend to try this marinade with other meat. I loved the smell of sesame oil.

Absolute Best Liver and Onions

I followed it exactly BUT I decreased the quantity of liver and onion to suit my appetite. The most important thing is to soak the liver in milk. One can use a cheaper cut of liver and it will taste like the most expensive calf liver - it also takes any bitter taste out of beef or lamb liver. I have used that tip for years.

Homemade Horseradish Sauce

I followed the recipe and found it delicious. I can't buy horseradish in any way, shape or form and have to wait until I go to Thailand. I can buy an American brand - Morehouse. It says Prepared Horseradish, so I hope it's what Chef J means. I ate it with a succulent pork chop andboiled potatoes fried up. This sauce will go with anything.

Company Liver with Onions

I thought it delicious. I have never used tin mushrooms in my life, but had a lovely mix of bolets, cepes and girolles which I used. As they were fresh, I didn't have any liquid, so made that up with white wine.

Eggplant Croquettes

I found this delicious. I don't know what Italian seasoned breadcrumbs are, so I used ordinary ones and put in some of the Greek Spice Rub that I found here. They were a bit wet, but I put them on a floured plate and that helped. They were even nicer cold the next day. Made smaller, they would be great for a party. The next time I will try a mix of vegs.

Devil's Steak Sauce

I am a bit perplexed as to what to say. Whilst I was cooking it, I tasted it a couple of times and found it delicious. But when I went to eat it with my steak, I was quite disgusted and I scraped it off the plate. However I am convinced that it would be just superb with game or duck. I have ordered a pigeon for next week. I used raspberries instead of jam. I was too lazy to walk a couple of metres to buy a jar. I have given it 5 stars for game, but none if it's with steak.

Maple-Mustard Glazed Pork Chops

I found this delicious. I had a maple syrup sample in the cupboard. I cannot get that sort of thing here in France. When I make it again, I will have to use golden syrup or honey. I do my marinating in a large glass jar. More convenient. A shake here and a shake there.

Ol' Man's Kidneys

I like offal very much and I found this recipe most pleasant. The whole idea appealed to me. Tomorrow I plan on having a ragout of lamb. To change my ideas a bit, I am going to use this recipe. I might try putting in some mushrooms too.

Hamburger Steak with Onions and Gravy

I am rather inclined to agree with FLO 3/2/10. The first time that I try a recipe I follow it. As I am cooking for one person I reduce the quantities of edibles to suit and the liquid parts by 1/2 or 1/4. But I stick to the recipe. Well almost....I always used garlic and not powder. Actually it is no different (except for the sherry) than what I have been making for years.

Slow-Cooker Barbecue Ribs

I am cooking for 1 person with a very small appetite, so halved the measures. I had a ketchup which was spicey enough for me. I found the sauce quite delicious. I don't know what a slow cooker is, so I fried them and towards the end finished them off in the sauce.

Elaine's Sweet and Tangy Loose Beef BBQ

I wouldn't like beef cooked like this. But the sauce sounded delicious and I wondered what I could do with it. I had cooked prawns in the frig, so I thought of using it for a dip or sauce. Then I remembered that I had a shoulder of lamb. I had cut a lot off it to put in the freezer, but I still had the bone with quite a lot of meat on it. I followed the recipe, except that I reduced the ingredients to a 1/4. I am rather wary of ketchup in cooking, so I used a bit and made the measure up with very good tomato sauce that I had in the frig. The result was excellent.
