World's Best Peanut Butter Fudge

This recipe was fantastic. I have been meaning to make this fudge for the holidays but have never actually done it. Today is my mom's birthday, so I made her a chocolate mayonnaise cake and topped it with this fudge (I halved the recipe and it worked perfectly). This is just like my Grandma Margaret used to make. Eating it makes me feel five again. Thank you!

Award Winning Soft Chocolate Chip Cookies

This is a really great cookies recipe, regardless of the negative reviews. I think that this cookie recipe depends on the person's fundamental baking skills and knowledge. First of all, the people who claim that the cookie is cake-like are baking these too long. BASIC baking tips: The butter and eggs must be room temperature. Anyone who bakes on the expert level should know this. You must have an oven thermometer. Use parchment paper or silicon baking mats to prevent brown bottomed cookies.

Anniversary Chicken I

I was having a very hectic day. I gave verbal instructions to my husband, hoping it would turn out edible. WOW! It was fantastic. He had a big grin on his face through dinner. I'm not sure if it's because he was pleased with himself or because it was so delicious. Either way, he was right.

Cappuccino Mousse Trifle

I made this for a family gathering and it was a big hit. I did change one thing, though. Instead of buying pound cake, I bought 2 pound cake mixes and added about 1/2 cup of cocoa powder to the dry mix and about 1/8 cup of strong instant coffee graduals to the milk and mixed it in. I followed the rest of the recipe exactly, though. If you like mochachino, you will love this.

Seven Layer Bars

This recipe is not new to my family, but I had forgotten all about it until now. It has been about 10 years since I have had these. Being a health conscious mom now, I cut the butter in half and only used half of the sweetened condensed milk. The only other alterations we make is the order in which things are layered. It works best if you add the graham cracker layer, the chips, the nuts, the coconut THEN the milk. It seeps through the layers and acts as a cohesive medium, allowing you to half the butter.. which is a good thing. :)

Italian Bread Bowls

Not impressed at all. Have been baking many years and have never seen a bread recipe that did not call for at least a little sugar to feed to yeast. Mine turned out flat and very tough. I know that I did not overwork the dough.

Japanese Chicken Wings

This recipe is very delicious. I would change two things. I would definitely add salt and pepper to the flour mixture.. It provides base seasoning to the chicken. Secondly, I agree with other posters: ginger and red pepper flakes balance the sweetness of the original recipe.

Orange Roughy with Citrus Sauce

This recipe has real potential, but is not perfect. The sweetness of the orange juice is NOT enough to counteract the tartness of the lemon and lime juices. There is no balance. To correct this problem, I suggest adding pineapple juice to taste. I was not overly impressed with this recipe, because I expect perfection and was disappointed in myself for not realizing the problem before presenting this to the dinner table. I give it a four star rating only because of the potential for excellence.

Best Big, Fat, Chewy Chocolate Chip Cookie

Veggie Fajitas

Very delicious. The only alteration I made was the addition of cumin, chili powder, salt, pepper, and canned green chilis. Top with diced tomato and mexican cheese and you have a perfect healthy meal everyone will love.

Yogurt Chicken

This recipe is very delicious. I made some minor alternations that made a big difference. I used Italian breadcrumbs and mixed in a dash of garlic powder, salt, pepper and cayenne. I am very diet-conscious, so I completely eliminated the use of butter. Instead of buttering the pan, i placed a cooling rack in the bottom of the 9x13 pan and lightly coated it with cooking spray. Instead of adding a pad of butter on top of the chicken, I lightly misted them with I Can't Believe It's Not Butter Spray. Since the chicken was not saturated with butter and because it was elevated with the use of the cooling rack, the chicken was crunchy all around, rather than soggy on the bottom. Very delicious flavor, though. My family loved the zippiness of the lemon yogurt.

Black Bean and Corn Salad I

Absolutely delicious! I put this with diced tomato, advacado and red onion into warmed corn tortillas and topped it with a tiny sprinkle of mexican cheese. Best tacos ever! My husband insisted that I never make anything else.

Pizza with Pepper, Onion and Feta

Absolutely delicious!! Even my not-yet-two-year-old son devoured it! The mozzarella cheese and pizza sauce of a traditional pizza was NOT missed. The flavors blended to perfection. I used tomato basil feta. Magnifique! My only suggestion is to roast the vegetables slightly before topping the pizza because the juice of so much pepper and onion can cause the dough at center of the pizza to be slightly soggy. The only alteration I made was adding fresh diced tomato. I also rubbed a tablespoon of pure olive oil on the dough, sprinkled it with fresh basil and red pepper flakes, which added a brilliant punch! We will incorporate this into our menu for sure!

Fish Tacos

I loved this recipe. The white sauce is phenominal. I did not have capers, but it was fantastic anyway. I suggest making the sauce in advance. The flavors mix and become bolder and more delicious if it is chilled for 4-5 hours prior to serving. I used popcorn fish bites from the grocery store rather than battering my own cod on one occasion and it was still great!
