I live in Ecuador & TRYING to adjust to life in a country that doesn't normally bake. Due to this fact, acquiring GOOD QUALITY cooking utensils & bakeware as well as common ingredients is VERY DIFFICULT!! Finding the "usual" baking ingr. has proven to be a huge challenge &, at times, downright frustrating. Ecuadorians are not accustomed to our ideas of desserts but, once they try them, they fall in love!! :-))) I am a self-proclaimed "Bakeaholic" & am getting very frustrated not being able to find the necessary tools & ingredients to satisfy my daily "fix"...BAKING. I also love to cook, mostly using a slow-cooker because the meat here is not finished out so has no marbling & thus no fat, but I have been unable to find a slow-cooker OR food processor here. For this reason, preparing the multitude of fresh fruits & vegs is a mind boggling task. If you have any ideas to "fix" my daily habit, PLEASE drop me a line @ email@example.com. My favorite things to cook
Pretty much ANY dessert that I can get the ingredients for here in Ecuador. I also love Southern, Mexican, Italian, & Chinese cooking. I can get lots of chicken, ground beef, & very lean, cheap cuts of beef in the way of roasts but NO steak & NO pork!! :-((( The beef here is not finished out so it has no marbling/fat which, of course, is necessary for the flavor & texture. Because I'm from Texas being without my usual "beef & pork fix" is REALLY narrowing down my recipes that I'm able to make. There are just so many ways I can use chicken & ground beef before I am craving all the other avenues of cooking. I AM STARTING MY OWN BAKING BUSINESS W/ CAKES & COOKIES SO ANY/ALL RECIPES THAT REQUIRE BASIC INGREDIENTS WOULD BE APPRECIATED VERY, VERY MUCH!! :-))) firstname.lastname@example.org w/ "Allrecipes" in subject line. My favorite family cooking traditions
I started doing the majority of the cooking & baking when I was 12 yrs. old due to the fact that my father was in the Army & my mom worked 2 jobs to support us 6 kids (& a multitude of friends that "dropped by" when they smelled an aroma that made their mouth water...) I used to bake an Almond pound cake that I got the recipe from a cookbook that was about 40 yrs. old when I first started baking it but have lost the recipe. I remember it had to be mixed for 10 MINUTES, ON HIGH, WITH ROOM TEMP. EGGS. Does anyone have such a recipe? It was THE MOST DELICIOUS, EASIEST, LIGHTEST pound cake recipe I've ever used & want to get it back into my recipe box here in Ecuador.

My cooking tragedies
Just being able to bake an item without burning it!! I do not have a traditional stove; I have an propane, box oven that has no temperature gauges, thus no way to know the true temp. All it has is a single knob that "sort of" turns to control the height/temp. of the flame. I CAN'T EVEN FIND A COMMON OVEN THERMOMETER; the kind that either sits on or hangs from the rack. Having one of those would improve my quality of "baking life" by 100%!! :-))) At least I would have the ability to know the temp. & adjust accordingly.
