Slow Cooker Beef Pot Roast

Thank you for a lovely change to my boring pot roast recipe. I used a large London Broil and cooked some small organic potatoes separately in a light chicken broth. Since my roast was only 3 lbs, I had room to add them at the end. Meat has become so expensive, and being a fitness nut, my kids love when I add potatoes to anything. It helped stretch my budget. But loving the mushrooms. (I also pulled the meat apart when it was done. Keeps the meat with the meal. Another budget stretching trick.)

Slow-Cooker Chicken Tortilla Soup

Spinach and Sweet Corn Mashed Potatoes

Thank you for this one!!! Always trying to find new ways to sneak spinach and other vegies into things my kids might eat. I didn't have potatoes so made it with instant. They loved it. Thanks again.

Vegetable Medley I

Always looking for ways to get the family to eat more fresh vegies. Salads can get tiring after awhile. This is a great addition. The vegies can be varied although some, like broccoil, can be a bit overpowering. Better with fresh basil. For some reviewers who feel the need to add more cheese, if you learn to use less, like this recipe does, you will find your waistlines shrinking. Eventually more cheese will seem like too much. A strong cheese like parmesan doesn't need great quantities.

Vegetarian Green Chile Stew

Always looking for delicious recipes that incorporate lots of vegies. This recipe is delicious as is...although I like to add a can or two of salsa verde (found in the Mexican cooking section) in place of the green chilis for extra bite. Also is great used as a chicken recipe. Today I had extra cooked chicken breasts so I used chicken broth in place of vegetable broth and put in my cubed chicken. I also add extra onion and garlic and today I had extra spaghetti squash and no yellow squash. I put in whatever I had. Great northern beans, frozen soup vegetables, and the rest was the same. My family loves it with chicken.
