About this Cook
My main interset is Bible Study and helping others. I also work 3 days a week. I work out regularly and have ran several races. Got a first place trophy for my age bracket in a 10k and finished a half marathon in 2 hours and 5 minutes. Also incorporate light body building into my routine so as to maintain good muscle mass. I love traveling but don't go often. Surf trips with my husband and the Grand Canyon last year. I wish I could spend more time in nature...all in good time. Love gardening as well and wish I had more time. Cooking is a necessity to a fitness lifestyle. I have been trying to find more vegi-full recipes that my daughters enjoy. Now I am experiencing thyroid trouble which my Dr. says is related to a gluten intollerance. I don't know. Did research and it sounds plausable. So..yuck..I need healthy gluten free recipes now. So far no good. Very starchy low fiber recipes for baked goods. (Rice flour, potato starch) Does not work for me. Help.
My favorite things to cook
I used to be the best baker. I could bake better than I could cook. I would show up with my bundts and breads and fancy cookies. Yeah. Back in my 20'3 and 30's. Now my 18-year old daughter has taken the torch. She is a natural. Her cinnamon rolls are spot-on. She just finished a cake decorating class and can fondant with the best of them. Now I am the one who brings the salad. No boring salads..lots of variety. Also I make a delicious lentil tabbouleh. (Lentils, fresh lemon, fresh garlic, chopped broccoil slaw, sun dried tomatos, chopped fresh spinach, and lots of parsley, and sometimes cilantro) Also make my own hummis. My girls love my beef stew, white chicken chili, and coconut curry tai chicken. But other than that I'm having a hard time trying to be a gormet and come up with nutrient dense, plus good tasting recipes. Of course everyone will love lasagna or creamy dishes. Twinkies and pop-tarts are deliscious. But I don't want to put those things in our bodies.
My cooking tragedies
Having a big gathering when I was younger and making the French's onion green bean casserole with fresh green beans. The beans were not all. By the time they were cooked the casserole was disgusting and had separated. Oh there are many more. (Like having a dinner party and being so busy socializing that when my timer went off for our dinner I found that my oven had quit on me early in the baking stage. We had to quickly order take-out.)

Slow Cooker Beef Pot Roast
Thank you for a lovely change to my boring pot roast recipe. I used a large London Broil and cooked some small organic potatoes separately in a light chicken broth. Since my roast was only 3 lbs, I had room to add them at the end. Meat has become so expensive, and being a fitness nut, my kids love when I add potatoes to anything. It helped stretch my budget. But loving the mushrooms. (I also pulled the meat apart when it was done. Keeps the meat with the meal. Another budget stretching trick.)

Slow-Cooker Chicken Tortilla Soup
My husband loved this so much. The only change I made was to add a can of cream of mushroom soup. YUM>

Spinach and Sweet Corn Mashed Potatoes
Thank you for this one!!! Always trying to find new ways to sneak spinach and other vegies into things my kids might eat. I didn't have potatoes so made it with instant. They loved it. Thanks again.
