The Best Meatloaf I've Ever Made

Reviewed: Jan. 11, 2012
With a couple of changes, this will be my go-to meatloaf recipe from now on. My whole family loved it. I omitted the bread and tripled the crackers. Added some bbq sauce to the mix and omitted the tomato sauce all together. Mixed up a topping of brown sugar, mustard and ketchup for it. Also, I won't bump the temp up to 400 next time. The temp of the meat got over 180 doing that so I'll just leave it at 350 next time. Delicious!!!

Spicy Lemon Pork Saute

Reviewed: Feb. 28, 2012
I followed other reviewers suggestions and cut the lemon juice in half and added some chicken broth. The chops were dry and bland. The sauce wasn't bad but it just didn't get into the meat. Doubt I'll make this one again.

Steak Stir-Fry

Reviewed: May 1, 2012
Delicious! I added the brown sugar as others have and used beef broth instead of bouillon, just because I had some already. I also added a bag of mixed veggies I had (carrots/corn/green beans) so my kids would eat it. They won't eat peppers. They liked it and I did too. Might try it on brown rice next time just so it's healthier. Try it!

Best Hamburger Ever

Reviewed: Jul. 5, 2012
This burger was awesome. My kids and spouse liked it. I normally use ketchup, egg, breadcrumbs, etc. and it always tastes like meatloaf. Which isn't a bad thing but I was ready for something different. I did not use the Lipton soup mix as I just didn't have any, and instead of the individual parsley/basil/oregano/rosemanry, I just used a heaping tablespoon of Italian seasoning mix. The burgers were delicious.

Grandma's Green Bean Casserole

Reviewed: Dec. 2, 2013
I don't like leaving bad reviews but I made this for Thanksgiving instead of the traditional mushroom soup recipe and sad to say, only one person liked it (out of 8). Admittedly I used frozen cut green beans instead of french style but it really didn't have a lot of flavor. Back to the old version that everyone liked.

Dad's Leftover Turkey Pot Pie

Reviewed: Dec. 3, 2013
I used a bag of frozen mixed vegetables (carrots, peas, corn, etc) and added a clove of chopped garlic just before the onions were done. Cut the pepper back to 1/4 t since my family doesn't like spicy. Didn't feel like messing with the crust so made the filling and served it over biscuits with a little shredded cheese on top. Came out wonderful. Will make it again for sure.

Southern Fried Chicken Gizzards

Reviewed: Dec. 21, 2013
I followed this recipe to the letter and while they were very tasty, I did not find that boiling them made them any more tender. I really thought it would as my mother would cook 2 whole chickens every Sunday when I was growing up (8 mouths to feed). She would cook the lives, gizzards and hearts for my dad but occasionally I'd get a gizzard and loved them. But she never boiled them first and they were always chewy as gizzards are. I was actually a little disappointed that they weren't more tender but they were still fantastic. Maybe next time I'll boil them longer (I went 2 hours on these). From the moment the water and vegetables came to a boil, the smell was wonderful!!!

Old Charleston Style Shrimp and Grits

Reviewed: Jul. 6, 2014
First of all this tasted amazing. Really good dish to have a couple times a year to just say the heck with eating healthy. That said...it is a bit involved so be prepared. The only thing I did different was use only 1 pound of shrimp (plenty) because they were expensive. I fed 3 adults and 2 kids on it and had some leftover. Oh, and for the grits/liquid measurement I adjusted to what I know works; 1 to 4 ratio comes out perfect every time. 1 cup grits, 4 cups liquid. Came out perfect in 15-20 minutes.
