Beef Stew VI

OMG! This smelled awesome while it was cooking. My only complaint was that I prefer a thicker stew and even with the cornstarch it wasn't quite as thick as I would have liked. The taste however more than made up for it and now I'll know for next time because we will definitely be making this again and again!

Cuban Midnight Sandwich

These were very tasty! My boys loved them and had fun squishing them in the pan. I used a nonstick Calphalon grill pan so we took it easy on the olive oil. I think next time I will also halve the mayo mix. As delicious as it is it was just too much mayo for our taste. Overall, very yummy, quick and kid-helper friendly!

Truck-Stop Buttermilk Pancakes

Very melt-in-your-mouth-good pancakes. They were nice and fluffy but not quite as thick as I like. I did scale down the recipe and it's quite possible this was the reason. I'll have to make some adjustments next time with my scaled down version because there is no way we could ever eat a full batch, our 5 servings were more than enough! All in all, 5 star recipe for great flavor and all around approval from my tasters!

Honey Baked Chicken II

This was very tasty and enjoyed by all. I served it over some yummy jasmine rice. No one ingredient is overpowering, they blend so well together! The curry is nice and subtle and smelled great in the oven. I also used frozen boneless, skinless chicken breasts in order to scale down the high fat content and they were very juicy and tender at 350 for 1 hour. We will definitely have this for dinner often!

Joey's Bread Pudding

This recipe came out very good but I kinda goofed through it. Mine was very thick & custardy with a nice crusty top even though I realized after I skipped the 'toast bread' step. Mine was already a couple of days old and nice and firm which helped to spread the butter and not smoosh the bread. I had to use about 3 cups heavy whipping cream and 2 cups half&half as that is what I had on hand. It wasn't grainy at all even without a water bath which I really liked. I also accidently dumped quite a bit of cinnamon after the shaker top fell off (oopsie!) but if this hadn't happened I think it may have been too bland. I will make this again with the same 'adjustments'. Yummy!

Best Big, Fat, Chewy Chocolate Chip Cookie

These came out pretty good. They were certainly big, fat and chewy and they did have A LOT of chips as stated by other reviewers. All in all one of the better chocolate chip cookie recipes in my collection.
