Mom's Best Peanut Brittle

This came out great! My boyfriend and I made it for his Holiday potluck since he LOVES peanut brittle and always secretly hopes for leftovers. Not having made peanut brittle before, I was a little nervous when it didn't heat up as quick as I expected, but it soon got up to temp and no burning. We sampled a few pieces and were so impressed with how delicious, and so easy! We plan on making this again next week for Christmas. Thanks!

Buttermilk Pancakes I

We really enjoyed these. The only thing I did differently was the addition of about 1 1/2 tsp of vanilla and I didn't bother with the blender, I just whisked wet ingredients into dry and blended really well. My boyfriend commented that 'this is how I like my pancakes.' It made the perfect amount for our family of four. We will certainly be using this again. Thank you!

Banana Wheat Bread

I should have read more of the reviews before putting this together. Unfortunately it was very dry and overdone after 50 minutes. It certainly has potential with more banana, less bake time and possibly some sugar & cinnamon. This time I just added honey to the top as a spread. I will try to make again with the previous changes/additions.

Garlic Chicken

My boys really liked this chicken. I don't know what it was but it just didn't get a 5 from me. I look forward to trying it again however and trying to tweak it slightly to find that perfect taste.

Party Italian Wedding Soup

We really enjoyed this soup. Rolling the meatballs seemed like it would never end, but it was worth it. They were just the right flavor for the soup. I was afraid they were going to taste like meatballs for spaghetti but they were perfect. I saved just enough for my father (who is Italian) to try and he was very impressed as well!

Wheat Germ Whole-Wheat Buttermilk Pancakes

These are surprisingly good even with a few other changes. I like to incorporate flax in most of my recipes and substituted it for about half of the oil. I also used plain whole wheat flour and not the pastry flour. I added about a teaspoon of vanilla and cinnamon also. These are very good even as leftovers which I can't say for some of the other pancake recipes on this site. We have made these several times already and will continue for many breakfasts, lunches and dinners to come!

Buttermilk Pancakes II

I am definitely a big pancake fan and I usually don't have a problem with pancakes but for some reason these just don't sit well with me. I've made them twice to give it a fair shot but maybe it's too much baking powder? They were kinda bland the first time so I added some sugar and vanilla which did improve the flavor, but other than being a bit too spongy for me, they just didn't do it. So far I like the truck stop buttermilk pancakes and I still have more to try! My boys really enjoyed them, but these just weren't the pancake for me.

Buttery Cooked Carrots

Okay, now I don't care for carrots much, but my kids do and they said they didn't notice much of a difference from regular carrots. I can see what they mean... there wasn't much of a flavor change. So, I made these again and added some cinnamon and a touch of nutmeg to the second batch and cut way back on the butter to maybe 2T and reduced the sugar as well. Both times I completely drained the water based on previous reviews and I still did not get much of a sauce to cling to the carrots. Not bad with modifications.

Honey Crunch Pecan Pie

A bit of a late review, but I made this for Thanksgiving this past year and everyone loved it! I was afraid it was going to be too sweet but it was perfect. It looked beautiful and tasted very yummy! I will definitely be making this again!

Easy Tuna Casserole

I wasn't overly impressed with this. I didn't think it tasted very tuna-y at all and I prefer my casseroles to be creamier which this was not. The French Fried onions added a nice touch though and I also added some mixed veggies but I think I'll stick with my own recipe for now. It was very quick to throw togeher which was a plus.

Shrimp Scampi Bake

This is the second time we have made this. The first time I changed things a little so I wanted to be fair and try it again without changes before rating. Still a great recipe but I was hoping for a little more flavor. I would recommend a little more mustard or lemon juice depending on how your taste steers. It was very good, however, served over pasta with a bit of salt added to accentuate the flavors.

These were very good. My only addition was a little cumin to the chicken, but other than that I kept everything else the same. My kids really liked these and already asked for them again on next week's menu!

Joey's Bread Pudding

This recipe came out very good but I kinda goofed through it. Mine was very thick & custardy with a nice crusty top even though after I realized I skipped the 'toast bread' step. Mine was already a couple of days old and nice and firm which helped to spread the butter and not smoosh the bread. I had to use about 3 cups heavy whipping cream and 2 cups half&half as that is what I had on hand. It wasn't grainy at all even without a water bath which I really liked. I also accidently dumped quite a bit of cinnamon after the shaker top fell off (oopsie!) but if this hadn't happened I think it may have been too bland. I will make this again with the same 'adjustments'. Yummy!

Rempel Family Meatloaf

Was it just me or was this very salty? The only thing I did differently was use less cracker than called for, simply because I didn't have enough. I did not substitute anything in it's place so I can't figure out why it seemed so salty to me. Anyhow, it had a good flavor otherwise and I just took each bit with mashed potatoes to even it out. The kids really enjoyed it too.

Easy Slow Cooker French Dip

This was alright. I thought for all the time cooking the meat would have a lot more flavor but it was quite bland. I added some spicy mustard to enhance the beef and did use the juice for dipping. I didn't think my kids would like it at all but they surprised me and I think enjoyed it more than I did. I may season it a bit more next time and see how it turns out. The meat was very tender however and the house smelled great when we walked in the door.

Chili Dog Casserole I

My kids loved this. It certainly does taste like a chili dog. We did use some healthier ingredients such as whole wheat buns, low fat hot dogs, low fat cheese, and turkey chili. The recipe was very kid friendly; my 8 year old made it almost all by himself and it was very quick. As good as it was it wasn't 'awesome' hence the 4 stars. We will have this every once in a while, when we are in need of a quick throw together dinner.

Ultimate Double Chocolate Cookies

I can't say I've ever made a chocolate cookie before quite like this but I won't ever have to look again. After baking about 6 different types of cookies for giveaways, and letting my boys taste them all, these were hands down the favorite. My youngest didn't even want to finish his other ones, he only wanted more 'chocolate cookies'. I think we'll be making these again VERY soon. Thank you!

Mrs. Sigg's Snickerdoodles

Yummy! I haven't had snickerdoodles for a long time and my kids thought I was crazy just telling them the name, but once they tried them they didn't care what they were called! These are great right out of the oven with a tall glass of milk. Next time more cinnamon for me though... you can never have too much! And I loved the way they crack open and contrast with the sugar-cinnamon. MMMMmmmm!

Mrs. Sigg's Peanut Butter Cookies

These cookies were just what I was looking for in a peanut butter cookie. They were soft and chewy and peanut buttery without being overpowering or losing their sweetness. My mother's only complaint was that I didn't use chunky peanut butter. But she can never have enough chunky peanut butter where I am definitely a smooth fan. Not a bad suggestion though. An awesome cookie!

Easy Sugar Cookies

I loved the flavor of these cookies! I searched and searched and found almost exactly what I was looking for. I made them exactly as stated in the recipe and they didn't quite turn out as large as I wanted. They were great right out of the oven but the next day they were still chewy but not very soft any longer. Next time I will make them larger and see if this helps. Great taste!
