Pork Chalupas

This is a great recipe! I have a larger crock pot so we doubled the recipe and froze the extra for quick dinners later. It freezes beautifully. My boys LOVE this filling and use it for quesadillas, burritos, tacos, etc. We still have some in the freezer, but will definitely continue to use this easy and delicious recipe!

Almost No Fat Banana Bread

This bread is the best version of low fat I have found. It's not overly chewy like some recipes out there. The cooking time for me seems a bit short tho, so be sure to test the middle before removing from the oven, my first loaf was still a bit gooey in the very center. For a yummy variation, try adding some flaked coconut. But be sure to reduce the sugar if using the sweetened kind. So delicious, thank you!

Cinnamon Belgian Waffles

These waffles were yummy! Perfect for a weekend morning or when you have a few extra minutes to prepare the egg whites. You do have to dirty a few extra bowls, but after you taste them, who cares! We also added about 1 teaspoon of cinnamon and I ended up using about 1/2 cup fat free evaporated milk and 1/2 cup buttermilk, just to use up the evap milk. Still delish! Made exactly 3 in a thick restaurant style Belgian Waffle maker. My boys loved them and said definitely 5 stars. Great recipe, thanks!

Chocolate Fudge Buttercream Frosting

This frosting was yummy! Not too sweet, not overly fudgy, and a great spreading texture and look. I generously frosted a 9X13 yellow cake and still have about a cup left over. I think I'll sub butter for the shortening next time though, I didn't really like the slickness of even such a small amount of shortening. Great recipe!

Acorn Squash with Apple

I don't think we really liked this recipe the way it was written. The prep time is a little misleading because it takes a bit of time to peel the squash after it has been boiled. By that time I could have roasted it in the oven and cut it into chunks and I think the flavor would have been much better. The squash and apple was bland and watery tasting. It just reminds me why I don't like to 'cook' things in the microwave. I don't feel like it really saved any time and the flavor was lacking. I DO think this recipe is worth a shot in the oven though and will try it again that way. Thanks for a great idea!

Never Fail Applesauce Spice Cake

This was an excellent cake. I used homemade applebutter in place of the applesauce and halved the spices. Other than that this was made exactly as stated and it was moist, spicy, not too sweet and kept really well. The icing could probably be cut in half and still have been enough for the cake since it was rather sweet and I still had some left over with the amount in the recipe, but that was just preference. Easy enough to fix, though. We used it as a spread on some banana bread and it was another perfect match! Thank you for a great recipe.

Acorn Squash

How can you go wrong with butter and sugar? We all love the roasted flavor of the squash and it comes out perfectly every time. My only addition is sprinkling a bit more brown sugar on the exposed edge of the squash and broiling it for the last couple of minutes. Also, if you have a grapefruit spoon or knife, the serrated, curved edge really helps to get the seeds and strings out of the center for almost any kind of squash. Yummy :)

Penne with Chicken and Asparagus

So simple and so delicious! This is a great throw-together-at-the-last-minute recipe. I usually have all of these ingredients on hand, and when I don't have the asparagus, I substitue fresh spinach with equally tasty results. Thank you!

Roasted Beets 'n' Sweets

YUMMY! We really like this combination. I'm not a fan of any kind of onion so I always leave that out, but I've made this now exactly as stated as well as a few variations, such as using pumpkin pie spice instead of the garlic, salt & pepper. Or I use butternut squash in combination with the beets and sweet potatoes. Any way you dice it and spice it, this recipe is a winner! Thank you!

Anchovy Linguine

I didn't love this recipe. I try not to change things until I've made it at least once following the recipe exactly, but I only had one 2-oz can of anchovies, and I was out of fresh parsley, so to this recipes credit, maybe it didn't have a fair chance. Even taking that into consideration, I thought this recipe was bland and I don't know that another 1/2 tin of anchovies would have made the difference to bring it up to a 4 or 5 star recipe. Maybe something in place of the water? My boys did like it though, so I will be trying it again when I have all of the exact ingredients. Thanks for a great idea using anchovies!

Streusel Topped Blueberry Muffins

These came out fairly well. I did cut the recipe in half, because I was short on blueberries for a full recipe and I also used half lemon and half vanilla extracts to up the lemon flavor a bit. The taste was great, but the batter was very thick, and even after adding a bit of extra milk, it was still tough to get these to 'fall' into the muffin cups. They did bake up light, not a dense muffin, but I still think I would play with the consistency of these, although the flavor was spot on! Thanks for a tasty muffin treat!

Cocoa Banana Bars

We really liked the flavor of this recipe, very full of banana! But even with cutting back the sugar it was still a bit sweet. These will make a perfect after school snack for the kids, though, and I'm sure we'll be making these again and again. A nice alternative to our other favorite... banana bread! Thanks for a tasty treat!

Low-Fat Blueberry Bran Muffins

These came out really good. I didn't have enough bran so I had to substitute 3/4 cup of Wheat germ instead. They had excellent flavor and texture. Mine were moist and not too heavy at all. Great for a quick snack or an on the go breakfast. Yummy!

Baked Ziti I

This recipe was great, but I'm not quite sure I'm used to the tangy sour cream. My boys loved it though and had seconds and even made sure to pack leftovers in their lunches! I did cut down the recipe to 4 servings and used half mild italian sausage/half ground beef. I also threw some sliced olives into the sauce mixture. We will make this again, even with the tangy sour cream it was still delicious! Thanks!

Creamy Rice Pudding

This is the first rice pudding recipe I used from this site, several years ago and it is still one of my favorites. It is easy to make and just the right amount. I love eating it warm with raisins stirred in and a sprinkle of cinnamon on top. Delish!

Tiramisu Layer Cake

Holy cow! This was delish! I made it for my father's birthday and he LOVED it! Even my kids loved it with the coffee flavor. There were a lot of steps involved, but overall it was not a difficult cake to make and it turned out beautiful! YUMMY! I can't wait for the next birthday!

Amazing Pecan Coffee Cake

I made this for a business meeting and it was very well received. I do think there was a tad too much topping, which was a little dry and crumbly, making it a bit messy. Next time I might try to put some in the middle of the cake and add a tablespoon of butter to the topping to help it crumb better. A delicious cake overall and great with coffee! I will definitely make this again.

Creamiest Rice Pudding

This recipe turns out every time. A bit more time consuming than some other stove top recipes on the site, but it is definitely creamy and it does surprisingly taste similar to KozyShack. I don't typically keep whole milk on hand, but I always get some when I know I'll be making this treat to make it that much creamier. Sooo good!

Janet's Rich Banana Bread

I think of all the basic banana bread recipes we like this one the best. I've made it several times, but for some reason I've never reviewed it before! I usually tweak its a little by adding about 2T ground flax, using 3-4 overripe bananas, 1t cinnamon, subbing 1/2c whole wheat flour for the all purpose, decrease sugar to 3/4c. I usually bake it in either mini loaves or a muffin tin since the large pan usually ends up cooking unevenly. It always turns out moist and not too greasy with a great banana flavor. We love this bread!
