About this Cook
I'm a single mom with two boys. I enjoy cooking a family dinner every night and baking treats on the weekends so the boys can bring a yummy snack to school during the week. I work downtown for a busy insurance agency so I don't always have the time to make what I'd like, but it helps to pull up allrecipes at work and find a quick recipe so I know exactly where to get started by the time I walk in the door.
My favorite things to cook
I love to bake! There is something comforting about baking for my kids, family and friends. Sometimes we have trouble finishing an entire recipe at the house so my co-workers enjoy the overflow as well! I believe in making almost everything from scratch; cakes, cookies, brownies, pies and even bread. Good old fashioned recipes with simple ingredients are our favorites.
My favorite family cooking traditions
I enjoy baking with my children. It has certainly become a regular weekend activity for us to find a new recipe to try. I grew up helping my mother quite regularly in the kitchen and now my children love to help me as well. They're getting to the age where they can do a lot of recipes by themselves so I get to sit back and supervise. Best of all, now I'm the taste tester!
My cooking triumphs
6 pies for Thanksgiving in one day with one oven. I was a baking maniac. I got an assembly line going and made the crust for the next pie while the previous one was in the oven and so on and so on.
My cooking tragedies
I had never prepared tofu before, but wanted to try it and see what all the hype was about. I found a tofu recipe from this site and it was so bad even I couldn't eat it! And that's saying a lot, because I have a strict policy against wasting food! But needless to say I think we ended up eating cold cereal that night.

Pork Chalupas
This is a great recipe! I have a larger crock pot so we doubled the recipe and froze the extra for quick dinners later. It freezes beautifully. My boys LOVE this filling and use it for quesadillas, burritos, tacos, etc. We still have some in the freezer, but will definitely continue to use this easy and delicious recipe!

Almost No Fat Banana Bread
This bread is the best version of low fat I have found. It's not overly chewy like some recipes out there. The cooking time for me seems a bit short tho, so be sure to test the middle before removing from the oven, my first loaf was still a bit gooey in the very center. For a yummy variation, try adding some flaked coconut. But be sure to reduce the sugar if using the sweetened kind. So delicious, thank you!

Cinnamon Belgian Waffles
These waffles were yummy! Perfect for a weekend morning or when you have a few extra minutes to prepare the egg whites. You do have to dirty a few extra bowls, but after you taste them, who cares! We also added about 1 teaspoon of cinnamon and I ended up using about 1/2 cup fat free evaporated milk and 1/2 cup buttermilk, just to use up the evap milk. Still delish! Made exactly 3 in a thick restaurant style Belgian Waffle maker. My boys loved them and said definitely 5 stars. Great recipe, thanks!
