About this Cook
Before I had children my cooking was terrible, and by terrible I mean I could barely boil eggs TERRIBLE. Since having children and becoming a stay-at-home mom of TWO beautiful children, I've really begun to have a new found respect for cooking. I used to think it was a lot harder than it actually was, so I always resorted to TV dinners, boxed meals and fast food. Before our family had expanded, it was in our budget to spend money on going out to eat often. But I have to say thank you to my husband for giving me that spark to cook...he says my cooking is getting better and better and that he's very impressed. And as my NaNa (mother n law) says in reference to learning how to cook, you take it one day at a time, learn from the mistakes and you will get there. :)

Slow-Cooker Chicken Tortilla Soup
I am not the best cook but this was so simple and super EASY to make! I did what one reviewer recommended and put the chicken breast in the crock put whole and shredded it with a fork when it was almost done. Put everything in the crock pot in the morning before church, and when we got back around lunch time, we didn't waste money going out to eat! it was WAAAAAY better than any tortilla soup I've ever had...and it tasted very authentic. It was a HIT! The only change- I added a spoonful of bouillon to the soup for added flavor. :) Topped with shredded cheese, avocado and drizzled with lemon juice (I didn't have limes) IT WAS SO DELICIOUS!
