Quick Fudge Icing

I poured this, while still hot, over "Peanut Butter Squares" by Marilyn Hanson. YUMMMM YUM! I substitued coconut oil in place of the shortening, but otherwise followed the directions. Be sure to let the sugar dissolve over low heat BEFORE boiling. Thanks to all of those who suggested this!

Baked Oatmeal I

My children really liked this, getting seconds, even the picky eaters. I used coconut oil in place of vegetable. cooking oats, rather than quick. We are out of raisins and so I used a 1/2 cup of brown sugar. We are out of milk, and so I used water instead. I also did not let it sit over night. I just put it in the oven as soon as I mixed it up. It made a cross between breakfast and dessert :) but still healthier than a box of cereal, I'm sure. We served it with a pat of butter on top.

Fast Chicken Divan

YUM! I made this for my 7 year old's birthday and used 2- 16oz bags of broccoli, because he really likes broccoli. I didn't realize until I was in the middle of making it that I was almost out of mayonnaise, so I used about a tablespoon of mayo and the rest I substituted sour cream. Everyone liked it, from 2 years on up. ***I will cook the broccoli longer next time.***

Sweeter Muffins

This is a recipe I'll tape on the inside of one of our kitchen cabinet doors. We are short on some ingredients, but what I changed still worked great. We're out of milk, so I used water instead. No fresh fruit right now, so I put a jelly layer (blackberry jelly) in between two layers of batter. I sprinkled raw sugar on top before baking at 350 for 25. The batter came out to about 8 good size muffins, rather than 12. Oh, and we're using coconut oil in place of vegetable oil and that worked out just fine.

Pizza Casserole

This was a HUGE hit at our house for everyone. It tastes even better than it looks. We have small children and so I arranged pepperonis on top of the cheese to make a smilie face. :) I'm glad I doubled this recipe or we wouldn't have had enough. There were 2 aduts eating and 4 children, ages 8 and under.

Half-hour Pudding Cake ( Montreal Pudding)

I was looking for something to make for breakfast with the ingredients we have in stock that would be a nice change from oatmeal/cold cereal. This was delicious and I will be making it again, soon! I didn't have white sugar, so I used brown instead. I added vanilla and as suggested, cinnamon. For the top, I used hot water, like was suggested, out of my Keurig coffee maker, but only used one cup instead of two. I added 2 tablespoons of butter to the water and brown sugar mixture. We had this hot and it was great!

Campbell's Kitchen Tuna Noodle Casserole

This reminded me of growing up as we ate it often. I will have to start making it often, too, because my children, even the picky eaters, loved it. Canned peas work just fine. If you are out of bread crumbs, you can throw crackers into a zippered baggie and pound them into crumbs.

Cherry Crumble

This was a nice quick dessert and a great way to use the cherry pie filling I've had sitting in my pantry for too long. Most of my family does not usually like cherries, but they actually enjoyed this.

Peanut Butter Squares

I liked these, but my husband who is a major peanut butter lover wasn't crazy about them. I don't think they were peanut buttery enough for him. One suggestion would be to sprinkle mini-chocolate chips over the top. --------------------------------------------- --------------------------------------------- I tried this again. This time, I used the recipe called "Quick Fudge Icing" By: Janice Reesman They are delicious together!!!
